No onion no garlic veg pulao recipe, Vegetable pulao

Veg pulao/ Vegetable pulao is a simple, delicious and colorful one pot meal that can be easily prepared at home in different styles. So this is one such style; NO ONION NO GARLIC VEG PULAO that tastes really delish with handful ingredients and serves as a great dish during vrat days like this Navratri. Just an upgraded version of Jeera rice loaded with veggies I would say. Wanted to share this recipe for long time, but kept forgetting it, I prepared this recipe last year but posting it this year, hopefully it will be helpful for others in the future. Sounds like poem right🤔 It happens sometimes.

Back to recipe, in this pulao I have added basic veggies like carrot, beans and green peas only, for spiciness you could add peppercorn while adding cumin seeds or slit green chili as per your liking. Ingredients
  1. 1. Basmati rice – 2 cups
  2. 2. Water – 2 ½ cups
  3. 3. Carrot – 1 (chopped to cubes)
  4. 4. Beans – 4 nos.
  5. 5. Green peas – ¼ cup
  6. 6. Jeer/ Cumin seeds – 1 tsp
  7. 7. Cloves – 2
  8. 8. Bay leaf – 1
  9. 9. Cinnamon stick – ½
  10. 10. Oil/ Ghee – 1 tbsp
  11. 11. Cashews - 4
  12. 12. Salt – to taste
Note
  1. * 1 cup = 235 ml
Instructions
  1. Wash and soak rice in water for 15 minutes. Meanwhile, chop carrot to small cubes, beans to ½ inch length. Keep it aside. Heat ghee in a pressure cooker to it add cumin seeds, when it crackles, cashews, bay leaf, cloves, cinnamon stick and cardamom. When aromatic put off the flame add the chopped veggies, green peas snd salt. Saute the veggies for about 30 seconds. Now add 2 ½ cups of water. Mix well and let the water come to a boil. When water starts boiling add soaked rice.
  2. When the mixture has started to boil close it and pressure cook for 3 whistles in medium flame. When the pressure has subsided allow it to rest for 5 more minutes. Now open the cooker. When the rice looks done take it from the sides using spatula and fluff it gently. Serve it hot with gravy of your choice.

Methi pulao

  1. Wash and soak rice in water for 15 minutes. Meanwhile, Chop carrot to small cubes, beans to ½ inch length. Keep it aside.
  2. Heat ghee in a pressure cooker to it add cumin seeds, when it crackles, cashews, bay leaf, cloves, cinnamon stick and cardamom. When aromatic put off the flame add the chopped veggies, green peas and salt. Saute the veggies for about 30 seconds.
  3. Now add 2 ½ cups of water (since we soaked the rice this much water will be sufficient). Mix well and let the water come to a boil. When water starts boiling add soaked rice. When the mixture has started to boil close it and pressure cook for 3 whistles in medium flame.
  4. When the pressure has subsided allow it to rest for 5 more minutes. Now open the cooker. When the rice looks done take it from the sides using spatula and fluff it gently. Serve it hot with Zucchini dal, Dal fry, Vegetable makhani, Methi malai paneer, Sarson ka saag etc on non vrat days.
