Coconut milk pulao, Vegetable pulao with coconut milk

Coconut milk pulao or coconut milk vegetable pulao is a very flavorful and aromatic one pot dish that is simply loaded with veggies. This pulao is made in a simple method using pressure cooker also without involving many ingredients yet is tasty because of the coconut milk. This pulao can be made even with chicken, or soya chunks or can be made without any veggies or meat too. My mom makes this plain coconut pulao without veggies often during summers as the temperature is really high in dubai. For that plain coconut pulao we used to relish with some spicy kurma or vegetable gravy. How much ever we spend money on outside food, mom is always the best cook. Happy to share her simple and easy recipe every time in the blog. This recipe works best for working women and for bachelor’s too as it involves very less time for preparation and cooking. For this recipe I used homemade coconut milk (the second batch/ second milk) which actually adds more taste to the recipe. If you are thinking of some simple and quick to make lunch box  variety rice this should do the job. So let’s get to the making!

Ingredients

  • Basmati rice- 2 cups
  • Water- ½ cup
  • Coconut Milk- 2 cups (I used 2nd milk)
  • Onion – 1
  • Mint – 1 tbsp (chopped, optional)
  • Beans- 8
  • Carrot – ½ cup
  • Potato – 1
  • Green peas – ¼ cup
  • Green chilli – 2
  • Ginger garlic paste- 1 tsp
  • Salt – to taste
  • Garam masala powder – 1 tsp
  • Oil – 1 tbsp

WHOLE SPICES

  • Bay leaf- 1
  • Star anise- 1
  • Clove – 2
  • Cumin seeds – 1/4 tsp
  • Cardamom – 1

* 1 cup = 235 ml

How to make Coconut milk pulao with step by step images


  1. Wash and soak rice in water for 20 minutes.
  2. Chop carrot, beans, mint and potato into cubes. Slice onions thin and make a slit in green chilli. Now heat oil in a pressure cooker add whole spices, when aromatic add sliced onions and green chilli. Saute well. When it looks sauteed add ginger garlic paste and saute well till the raw smell goes.
  3. Now add chopped veggies, green peas, salt and garam masala powder. Saute the veggies in oil for a minute. When veggies look sauteed add the coconut milk and water. I used second milk as first milk curdles while boiling. Mix well.
  4. Now add soaked rice. Mix well and check for salt. When the mixture boils put the lid and pressure cook for 2 whistles in medium flame. When the pressure has subsided allow it to rest for 5 more minutes. Now open the cooker. When the rice looks done take it from the sides using spatula and fluff it gently. Serve it hot with raita!
