Corn vada or sweet corn fritters are quick and crispy Indian snacks made using ground corn and bread. Perfect for tea time or surprise guests!

Ingredients for Corn vada

  • 1 cup, 1 Corn (frozen or fresh)

  • 2 slices. 2 Bread slices
    (white part only)

  • 3 tablespoon, 3 Maida
    (all-purpose flour)

  • 1 tablespoon, 1 Rice flour
    (adds crispiness)

  • 1 nos. 1 Green chili
    (finely chopped)

  • ¼ teaspoon, ¼ Ginger
    (finely chopped, optional)

  • 2 tablespoon, 2 Cilantro
    (finely chopped)

  • Salt – to taste

  • Oil – for frying

Directions to make Sweer Corn Vadai

  • Prepare the Base
    Grind frozen or fresh corn to a coarse paste using a blender. Trim the edges of the bread slices and tear the white portion into small bits.
  • Make the Dough
    In a mixing bowl, combine the ground corn, bread pieces, maida, rice flour, chopped green chili, ginger, salt, and cilantro. Mix well into a soft dough. If it feels dry, sprinkle a little water.
  • Shape the Vadas
    Heat oil in a pan. Take a small portion of dough, shape into a ball, and gently flatten it into a patty. Repeat until all dough is used.
  • Fry Until Golden
    Drop the vadas into hot oil and fry on medium flame until golden brown and crispy. Drain on paper towels.
  • Serve Hot
    Serve the crispy corn vadas hot with tomato ketchup or mint chutney.

Can I use fresh corn instead of frozen?

Yes, just steam or boil the fresh corn before grinding. Frozen corn saves time and works perfectly.

Can I skip maida (all-purpose flour)?

Yes, you can substitute it with wheat flour or besan (gram flour), though texture might differ slightly.

Can I air fry or bake these vadas?

Yes! Brush with oil and bake at 180°C (350°F) for 15–18 minutes or air fry at 200°C (390°F) for 10–12 minutes. Flip halfway.

Are these vadas gluten-free?

Not in this version (due to bread and maida). To make it gluten-free, use gluten-free bread and flour.

Can I make this ahead of time?

You can shape and refrigerate the dough balls. Fry just before serving for best crispiness
