Ingredients
- 1. Chicken breast – 1 lb
- 2. Green capsicum – 1
- 3. Onion – 1
- 4. Red capsicum – 1
- 5. Tomato – 1
- 6. Curd – ½ cup
- 7. Ginger garlic paste – 1 tsp
- 8. Red chilli powder – 1 ½ tsp
- 9. Garam masala powder – ¾ tsp
- 10. Turmeric powder- a pinch
- 11. Coriander powder – 1 tsp
- 12. Lemon juice – 1 tsp
- 13. Salt – to taste
- 14. Oil – 4 tsp
Note
- * 1 cup = 235 ml
Instructions
- Wash and clean chicken breast well. Chop each chicken breast into 3 or 4 pieces. We need medium sized chunks and not small ones as the chicken will end up shrinking when baked.
- Now in a wide bowl add curd, red chilli powder, turmeric powder, garam masala powder, salt, coriander powder, lemon juice and ginger garlic paste. Mix well until combined. Now add chopped chicken breast and mix well. Marinate it for about 30 minutes at least. For best results marinate it overnight.
- After marinating the chicken for preferred time add all the chopped veggies.
- Preheat oven at 400 degree. Now line a baking tray with aluminum foil. Take each skewer and thread the chicken pieces and veggies in the order that best suits your taste. I placed then in this order chicken piece, green capsicum, red capsicum, onion and tomato and repeated the same.
- Now arrange the skewers on the foil placed on the baking tray. Add 2 tbsp oil over every skewer with chicken and veggies. Now bake the chicken for 35 – 40 minutes.
- I flipped it once and you can see the final result was little charred one just as the restaurant which actually brings all the flavors to the chicken. When the chicken has achieved desired levels of cooking take the tray out and serve it hot !
