Broccoli paratha recipe, How to make broccoli paratha

Broccoli paratha is a quick and easy to make healthy Indian flatbread with broccoli and spices as stuffing. This paratha tastes great with plain curd/ pickle and can be served as breakfast, lunch or dinner as well. This is an excellent and yummy way to consume broccoli even for those who hate it will also relish it. I have made the stuffing just like regular stuffed paratha by placing stuffing in the center and flattening the dough, If you are beginner and worried about the stuffing spilling out then you can roll a ball of dough like a regular chapati and then spread little filling over it evenly and then place another rolled chapati and seal the ends. For dough
  1. 1. Wheat flour – ½ cup
  2. 2. Maida – ½ cup
  3. 3. Oil – 1 tsp + 5 tbsp (to make paratha)
  4. 4. Salt – few pinches
  5. 5. Water – ½ cup (approx.)
For stuffing
  1. 1. Broccoli – 1 cup (grated/ minced)
  2. 2. Onion – ¼ cup (finely chopped)
  3. 3. Ginger garlic paste – ¼ tsp
  4. 4. Chilli powder- ¼ to ½ tsp (depending on spice level)
  5. 5. Cumin powder – ½ tsp
  6. 6. Garam masala powder – ½ tsp
  7. 7. Cumin seeds/ Jeera – ¼ tsp
  8. 8. Salt – to taste
  9. 9. Oil – 1 tbsp
Note
  1. * 1 cup = 235 ml
Instructions
  1. Blanch the broccoli florets in boiling water for 2 to 4 minutes. After 2 to 4 minutes drain the water and keep the florets aside.
  2. Meanwhile in a bowl add wheat flour, salt and oil. Mix well and add water gradually to make a soft dough. Keep it aside for 20 minutes.
  3. Now either grate the broccoli/ add the blanched broccoli in a blender/ mixie and pulse it corse. Keep it aside.
  4. Heat oil in a pan to it add jeera/ cumin when it crackles add chopped onion. Saute well then add ginger garlic paste. Saute well till the raw smell goes.
  5. Now to the sauteed onion add grated broccoli, salt, red chilli powder, cumin powder and garam masala powder. Saute well for 5 minutes until the grated broccoli is roasted well and the raw flavors of masala is gone. When the broccoli filling is ready put off the flame and keep it aside for it cool down.
  6. Now pinch a small portion of dough and flatten it little (small circle). Place the broccoli mixture in the center and pleat it. Pinch of the excess dough from the center. Now dust flour and flatten it gently and evenly into paratha. Heat a pan and place the flattened paratha and drizzle some oil around it. When you see brown spots flip gently and cook the other side. When done transfer it to a plate and serve it hot with curd and pickle.
