Quinoa egg fried rice recipe, Indian quinoa recipes

Ingredients
- 1. Quinoa – 1/2 cup
- 2. Water – 1 cup (to cook quinoa)
- 3. Chopped veggies– 1 cup (beans, carrot, onion, capsicum)
- 4. Egg - 1
- 5. Spring onion – 1
- 6. Salt – to taste
- 7. Ground pepper- ¼ tsp
- 8. Oil – 1 tbsp
Note
- * 1 cup = 235 ml
Instructions
- In a pot add water and washed quinoa. Mix well and cook the quinoa in medium flame with lid on. This should take about 8 to 10 minutes. When done (quinoa should have white tail if cooked fully) put off the flame and keep the cooked quinoa aside to cool down. When quinoa is hot it will be little bit sticky after it cools down it will look like individual grains.
- Slice onions thin, capsicum into julienne, chop beans, carrot and spring onion. Keep the cooked quinoa ready. Make sure the quinoa has to look into individual grains.
- Now heat oil in a pan, add onions, white stalk of spring onion and saute well.
- Now add chopped beans, carrot, cabbage, green pepper/ capsicum saute well. This should take about just few minutes. Do not overcook it as we want the veggies to be crispy. When the veggies are getting sauteed add pepper powder and salt. Mix well.
- When the veggies look sauteed push them to the side of the pan then add beaten egg. Scramble it well and then combine it with the veggies.
- Now add cooked quinoa and toss well. When everything looks combined put off the flame. Serve it hot with ketchup.
