Chicken tawa fry recipe, Tawa chicken fry

Chicken tawa fry/ Chicken tawa roast as the name suggests it is a simple yet delicious chicken fry recipe prepared by roasting/ frying marinated pieces of chicken in tawa to perfection with flavors of curry leaves. We usually eat either chicken lollipop, chicken 65, chili chicken, chicken drumstick (baked) or chicken kebab which involves too many ingredients but we people forget to try/ cook such simple tawa fry/ roast which involves handful ingredients and easy cooking technique. So thought to share this homely recipe that has been passed on from my MIL to me but I did a little tweak to the original recipe by adding springs of curry leaves which elevated the taste of the dish and enhances its flavors as well. I copied this trick from thalapakatti restaurant and it really did justice to this dish. Nothing much to explain as the dish is itself simple. I have used only chicken drumstick in this recipe as I had only those at home. Try making this chicken tawa fry for Sunday lunch and serve it along with plain kuska/ chicken biryani. So let’s get to the making of chicken tawa roast !!

Ingredients

  • Chicken drumstick – 6 pcs
  • Ginger garlic paste – 1 ½ tbsp
  • Red chili powder – 1 to 1 ½ tsp
  • Garam masala powder – ½ tsp
  • Salt – to taste
  • Curd – 2 tbsp
  • Turmeric powder – ¼ tsp
  • Oil – ¼ cup
  • Curry leaves – few sprigs

* 1 cup = 235 ml

How to make Chicken tawa fry with step by step images


  1. Clean and wash chicken drumstick and make slits on it. Now in a bowl add the chicken drumstick to it add ginger garlic paste, turmeric powder, red chilli powder, garam masala powder, salt and curd. Coat the chicken well in the masala specially the slits. Do not add more curd than mentioned. Marinate the chicken for at least 4 hours or overnight for best result.
  2. After 4 hours of marination, heat 2 tbsp oil in a pan/ kadai, to it add curry leaves springs, when it splutters add the marinated chicken. Roast it in oil, flipping it gently occasionally and fry/ roast it well. Do not add water as the water from chicken and curd will be enough to cook the chicken. You can cover it with a lid and cook in low to medium flame and it should take about 15 to 20 minutes to cook 3 chicken drumstick. When the chicken looks roasted remove it from the pan and add the remaining chicken pieces snd cook. When done serve it hot with biryani/ sambar rice.
