Air fryer pav recipe, How to make pav in air fryer

Air fryer pav is an extremely soft and spongy Indian dinner roll prepared with maida/ All purpose flour, milk, yeast, sugar and butter, which is kneaded into soft dough, divided into balls and baked to perfection in Air fryer. Pav buns/ Indian dinner rolls are usually baked in oven but thought to make it in Air fryer for the longest time but never happened. So I was also a silent reader in Fb when making pav bun was so much in trend in the months of April, May and June, not to mention I was also one among you guys who started baking pav buns regularly at home😂😂 Yes I bake pav rarely at home as we always have the comfort and easy peasy way to get yummy pav at store but during lockdown I have also started making regularly and stopped relying on store bought ones. This time I tried making eggless version and I am waiting to make pav with eggs and will surely post it sometime.

So one fine day made pav in Air fryer and it turned out more awesome than the one made in oven and I was truly surprised. After then I started making pav in Air fryer regularly and the house just smells divine. I took these pics in June but couldn’t post it this long time as festival recipes were in row and totally forgot about it. Glad I posted it today. Few months back I posted a very healthy pav recipe like this Whole Wheat Pav bun and was greatly appreciated by readers.
With this air fryer pav you can make a yummy dish like Vada Pav or relish it with bhaji. So let’s get to the making!

Ingredients

  • All purpose flour/ Maida – 2 cups
  • Milk – 1 cup
  • Yeast – 2 tsp
  • Sugar – 1 tbsp
  • Melted butter – 3 tbsp (for kneading + for applying on pav)
  • Salt – 2 pinches
  • Milk – ¼ cup (for milk wash)

* 1 cup = 235 ml

How to make Air fryer pav with step by step images


  1. Take 1 cup warm milk in a cup/ bowl, to it add yeast and sugar. Mix well and keep it aside undisturbed for 10 to 15 minutes until frothy. Always make sure to take luke warm milk, a temperature that shouldn’t hurt when put your finger in milk. This step is very important because only warm warm milk can activate yeast which is again very important to help the dough rise.
  2. Now in a bowl add all purpose flour, salt and 2 tbsp oil/ melted butter. Mix well.
  3. Now to the flour mixture add frothy yeast milk mixture. Mix everything well and knead it into soft dough. Knead the dough for about 7 to 8 minutes which helps in yielding soft pav with spongy texture. If the dough is very soft and little sticky even more good as it will yield soft pav. Kneading a soft dough is very important in yielding soft pav bun. A soft and perfect dough is something which will bounce back once poked with finger. (Over kneading will make the pav hard as well) Cover the dough and keep it aside for an hour in warm place. (This rest time will help dough to double in size and will create aeration). Do not skip the resting time.
  4. After an hour the dough would have doubled in size. Punch it and knead it once gently.
  5. Now divide the dough equally and roll them gently into round shape.
  6. Now place parchment paper in the air fryer tray and place the dough balls one by one and cover it with a towel. Now set aside this dough aside for 1 hour. Place the dough balls in parchment paper so that it can be transferred easily onto a plate/ tray when the air fryer is preheating.
  7. After an hour the dough balls would have risen and again doubled its size. Now  remove the parchment paper with dough balls from the air fryer tray and keep it on a baking tray/ plate. As you can see in the picture I have removed the pav dough from the tray before preheating. Preheat the air fryer to 310F degree for 5 minutes. Now dip a basting brush into milk and apply gently it on the buns to achieve even browning on the pav bread when baked. The process is called milk wash. Now slide the tray into the Oven and bake them for 20 mins until golden brown.(Every air fryer is different so baking time might differ based on quantity and brand)
  8. When done remove the tray from the oven and apply butter on the pav for that extra shine. Then cover the pav with wet muslin cloth for 5 to 10 minutes. After 5 to 10 relish the pav with bhaji masala.
