- 1. Kada egg/ Muttai – 8 to 10
- 2. Onion- 1
- 3. Green chilli - 2
- 4. Garlic – 2
- 5. Ginger – small chunk
- 6. Red chilli powder – 1 tsp
- 7. Coriander powder – ½ tsp
- 8. Turmeric powder – ¼ tsp
- 9. Garam masala powder – ½ tsp
- 10. Cumin powder – ¼ tsp
- 11. Pepper powder- ½ tsp
- 12. Curry leaves -few
- 13. Cilantro/ coriander – 1 tbsp (chopped)
- 14. Salt – to taste
- 15. Oil – 1 tbsp
- In a pan of water add quail eggs boil it for 15 minutes. When done keep it aside for 5 minutes and deshell each egg. When you deshell the eggs, the shell interior is light blue in color which is normal. Keep the eggs aside.
- Heat oil in a pan, add cumin seeds and fennel seeds, when it splutters add chopped ginger and garlic. Saute for few seconds, Now add chopped onion, green chilli and curry leaves. Saute well.
- When onion looks sauteed add turmeric powder, red chilli powder, coriander powder and salt. Give it a quick stir and add garam masala powder, pepper powder and cumin powder. Saute well.
- Now add boiled eggs. Toss the eggs in masala quickly and sprinkle some water. When the masala oozes out oil in the sides of the pan put off the flame. Serve it with any main dish of your choice!
