Palada payasam with homemade ada, Ada payasam

Palada pradhaman/ Palada payasam with homemade ada is a delicious sweet prepared by adding ada (rice flakes) to boiling milk which is flavored with cardamom and garnished with ghee fried cashews. This sweet delicacy is a traditional Kerala pudding usually served in “Onam sadhya”(an elaborate platter of dishes consisting of savory and sweet on banana leaf).

The ada (rice flakes) used in the recipe is traditionally prepared by grinding soaked rice to batter and steamed in banana leaf and cut into shapes. But these days this ada is easily available in stores. Since I couldn’t find this ada/ rice flakes in stores during this pandemic I thought to make my own ada and trust me it took only” 5 minutes” to prepare. This same recipe can be prepared with jaggery as well and it also tastes super yum called Ada pradhaman which I shall post sometime. So let’s get to the making!

For ada
  1. 1. Rice flour – 2 tbsp
  2. 2. Water – 5 tbsp
  3. 3. Salt – a pinch
  4. 4. Ghee/ oil – 1 tsp
Ingredients
  1. 1. Ada – ¼ cup
  2. 2. Milk – 1 cup
  3. 3. Sugar – 4 tbsp
  4. 4. Cardamom – 1
  5. 5. Cashews – 5
  6. 6. Ghee – 1 tsp
Note
  1. * 1 cup = 235 ml
Instructions
  1. In a bowl add rice flour, oil and salt. Mix well add water to make thick batter.
  2. On a steaming plate place a banana leaf/ aluminum foil to it pour the batter. Place the steaming plate in steamer and steam it for 10 minutes.
  3. After 10 minutes remove the cooked ada from the steamer. Cut the ada into desired shapes using a knife. Keep the ada aside.
  4. In a pan add 1 tsp ghee and fry cashews til it turns golden brown. When the cashews turn golden brown remove it from the pan and keep it aside.
  5. Now in the same pan add milk and allow it boil. When the milk starts to boil add cooked ada pieces, cardamom and sugar. Mix well.
  6. Allow the mixture to boil well for about 3 to 4 minutes until everything is completely combined.
  7. After 3- 4 minutes of boiling add ghee fried cashews to the palada pradhaman and mix well. Put off the flame and serve the payasam/ padala pradhaman when warm.
