Chicken biryani recipe, Ramadan recipes

Chicken biryani is a flavorful and delicious one pot meal prepared with aromatic basmati rice and chicken. This chicken biryani is prepared in stove top method and uses biriyani masala to add more flavors and taste. I have posted many varieties of biryani both veg and non-veg recipes earlier but thought to post this super simple and easy to make biryani as EID festival is almost there. In this recipe I used store bought biryani masala which can be replaced with homemade biryani masala as well and also used chicken drumstick and thighs in the making. Also for this recipe I dint marinate chicken before cooking to keep it simple but if you have enough time and want it even more tasty you can marinate the chicken with salt, turmeric powder, chilli powder, curd, ginger garlic paste and lemon juice for min 1 hour/ overnight.  So let’s get to the making!

Ingredients
  1. 1. Basmati rice – 2 cups
  2. 2. Chicken – 1.5 lb/ ½ kg
  3. 3. Onion – 1 large (2 medium sized)
  4. 4. Tomatoes - 2
  5. 5. Ginger garlic paste – 1 tbsp
  6. 6. Turmeric powder – ½ tsp
  7. 7. Red chilli powder – 1 tsp
  8. 8. Biryani masala – 1 tbsp
  9. 9. Garam masala powder – 1 tsp
  10. 10. Salt – to taste
  11. 11. Coriander/ Cilantro– ½ cup
  12. 12. Mint – ½ cup
  13. 13. Curd – 2 tbsp
  14. 14. Oil – 3 tbsp
  15. 15. Ghee – 3 tbsp
Whole spices
  1. 1. Bay leaf - 1
  2. 2. Star anise - 1
  3. 3. Clove - 2
  4. 4. Fennel seeds - ½ tsp
  5. 5. Cumin seeds - ½ tsp
  6. 6. Cinnamon stick - 1
Note
  1. * 1 cup = 235 ml
Instructions
  1. Wash and soak basmati rice in water for 20 minutes. I soaked rice in enough water. Drain the water and keep the rice aside.
  2. Now heat oil in a pan add whole spices when aromatic add sliced onions and green chilli. Saute well. When onions look sauteed add ginger garlic paste to it and saute until the raw smell goes. Now add chopped tomatoes, chopped mint and cilantro. Saute well.
  3. Now add chicken pieces, turmeric powder, red chilli powder, biryani masala and garam masala. Saute well.
  4. Now add curd and mix well. Now add 4 cups water and mix well. Allow it to cook with lid on in medium flame. This should take about 10 minutes.
  5. When the chicken looks cooked check for salt and make sure enough water is there. Now add soaked rice and give it a gentle stir. Now cover the pan with lid and cook for 5 minutes in high flame and next 15 minutes in low flame. When done put off the flame and fluff the rice gently and serve it hot with raita!
