Veg nuggets recipe, Homemade vegetable nuggets

Veggie nuggets as the name goes is a bread coated deep fried snack prepared with a mixture of veggies. We all know about nuggets which is usually prepared with chicken which is a regular one so thought to try something different and here I ended up making veg nuggets which can be served as snack or appetizer. I have tried to incorporate the international herbs and pepper powder to make it taste like original chicken nuggets but if you like a bit of Indian touch you can try adding ginger garlic paste and garam masala powder as well. According to me this is an additional way to consume veggies which will be easily devoured by both adults and kids. Earlier I tried making these nuggets without cooking carrot and beans and it tasted very raw so gave it second try with steamed veggies and it tasted great. Do try this recipe and let me know your feedback. You can try adding grated paneer and cheese too to make it more yummy. So let’s get to the making!

Ingredients

  • Carrot – ¼ cup
  • Beans – 6 to 8 nos
  • Green peas – ¼ cup
  • Potato- 1 to 2 (big sized)
  • Ginger garlic paste – ½ tsp (optional)
  • Grated cheese – 1 tbsp (optional)
  • Bread slices – 5
  • Pepper powder- ¼ to ½ tsp (depending on spice level)
  • Italian seasoning – ¼ to ½ tsp
  • Salt- to taste
  • Oil- required amount for pan fry
  • Cornflour – 1 tbsp
  • Maida / All purpose flour – 3 tbsp + 1 tbsp
  • Water- required amount to make paste

How to make Veg nuggets with step by step images


  1. Take bread slices and make it into small pieces. In a blender add the bread pieces and blend it into crumbs. Transfer the bread crumbs to a plate as it will be easy to coat the nuggets.
  2. Now in a bowl add cooked and mashed veggies(carrot, beans, potato and green peas), 2 tbsp ground bread crumbs, Italian seasoning, pepper powder, 1 tbsp maida, corn flour and salt if required. Mix well until combined. (Boil veggies or steam veggies and mash it well)
  3. In a small bowl add 3 tbsp maida and water. Mix well to form a thick paste. This mixture will be used for dipping cutlets before coating with bread crumbs.
  4. Now pinch a small portion of the mixture and roll it into a ball, then flatten it gently by placing into small rectangle. This is basic nugget shape but you can make it into any desired shape. (You can also use any shaped cutter/ mold to shape your mixture. Repeat the process till all the mixture is complete.)

  5. Now gently take one shaped nugget mixture, coat it well in the maida batter and then immediately transfer the maida coated nugget on to the bread crumbs. Coat the batter coated nuggets well in bread crumbs. When coated well keep it aside. Repeat the whole process till all the nugget mixture is coated.

  6. Heat oil in a frying pan and gently drop the bread crumbs coated nuggets one by one and fry them in medium flame till both sides turn golden brown. When done transfer it to a plate with paper towel and serve it hot with ketchup.
