Ingredients
- Shrimp – 10
- Onion – 1
- Tomato – 1
- Green chili – 1
- Clove – 1
- Cardamom -1
- Star anise – 1/2
- Cinnamon sticks – 1/2
- Bay leaf – 1
- Cilantro – 1/2 cup
- Mint – 1/2 cup
- Ginger garlic paste – 1/2 tbsp
- Red chili powder – 3/4th tsp
- Coriander powder – 1/2 tsp
- Garam masala powder – 1 tsp
- Turmeric – 1/4th tsp
- Salt to taste
- Oil – 2 tsp
- Cashew – 6
- Raisins – 5
- Ghee – 2 tbsp
- Fried onions – 1/2 cup
Ingredients for rice
- Basmathi rice – 1 1/2 cup
- Bay leaf – 1
- Cloves – 2
- Cinnamon stick – 1/2
- Cardamom – 1
- Star anise – 1/2
- Cumin seeds – 1/4 tsp
- Mint leaves – 5
- Ginger garlic paste – 1/4 tsp
- Oil – 1 tbsp

How to make shrimp dum biryani with step by step images

- Wash and soak basmati rice in water for 20 minutes. Chop onions, tomato, cilantro and mint. Wash clean and devein shrimp.
- Marinate shrimp with salt and turmeric.
- In vessel add water , salt, mint leaves, ginger garlic paste, cloves, staranise, cinnomon sticks, bay leaf, cardamom,oil and allow it to boil. Add rice to the boiling water and cook until 60% done.
- Heat oil in a pan; add fry cashews until golden brown then fry raisins until they puff. Make sure not to burn them.Heat oil in heavy bottom vessel and add bay leaf, cinnamon sticks, clove, star anise and cardamom, when aromatic add sliced onions and saute until lightly brown.
- Now add ginger garlic paste to it and saute till the raw flavor goes. Now add chopped cilantro and mint ; saute till they shrink.
- Now add tomatoes and after giving it a quick stir add all the dry powder including salt. Saute till the raw smell of masala goes. Now add shrimp and saute well.
- Then add curd and mix well ; cook for 2- 3 minutes.
- Now add the cooked rice over the shrimp mixture. I dint create layers as this methods gives best results.
- Garnish rice with fresh mint, fried onions, cashew and raisin and cover it with lid and cook for 20 minutes in low flame. ( I used a vessel that locks steam inside so i did not cover the lid with wheat flour dough)
