Ingredients
- 1. Pumpkin seeds- 1 cup
- 2. Milk – 1 cup
- 3. Sugar – ¾ to 1 cup
- 4. Water – ¼ cup
- 5. Ghee – 2 tbsp
Note
- * 1 cup = 235 ml
Instructions
- Soak pumpkin seeds in water for 1 to 2 hours. Soaking is a compulsory step which helps in grinding the seeds so don’t skip this step.
- Now in a blender add soaked pumpkin seeds and grind it into paste adding little water. I used around ¼ cup water for grinding.
- Heat 1 tbsp ghee in a nonstick pan/ kadai, to it add the pumpkin mixture. Mix the mixture well and soon you will find a crumbled texture to it add milk and mix well. Allow the mixture to cook well in low to medium flame until the mixture becomes dry. I put lid on while cooking the mixture. This should take about 10 minutes.
- After 10 minutes of cooking when the mixture looks dry add sugar, mix well and the mixture will get little watery and again it will get dry after 2 to 3 minutes. Cook for 2 minutes.
- After 2 minutes of cooking add 1 tbsp ghee to the mixture. Cook for 1 minute and the halwa is ready. Switch off the flame and the serve the halwa with saffron strands as garnish.
