Green vegetable biryani is a very aromatic and flavorful biryani loaded with veggies. Adding a paste made with mint and cilantro gives the biryani beautiful green color and adds to its taste making it stand out among other biryani. Green vegetable biryani requires all the same ingredients used in making regular vegetable biryani, just an addition of the green paste makes all the difference. So if you are looking for an easy yet different and yummy lunch recipe for this Saturday this shall work best. So lets get to the making!

Ingredients

  • Basmati rice – 1 ½ cup
  • Onion – 1
  • Green chilli – 2
  • Ginger garlic paste – 1 tsp
  • Carrot – 1(small)
  • Beans – 8 to 10
  • Potato – 1
  • Green peas – ¼ cup
  • Turmeric powder – ¼ tsp
  • Red chilli powder – 1 ½ tsp
  • Garam masala powder – ½ tsp
  • Coriander powder – ½ tsp
  • Salt – to taste
  • Oil – 1 tbsp

Ingredients For grinding

  • Mint – ½ cup
  • Cilantro – ½ cup
  • Green chilli – 2
  • Cinnamon stick – ½
  • Cloves – 1
  • Bay leaf – 1
  • Star anise – 1/4

Whole spices

  • Bay leaf – 1
  • Star anise – 1
  • Clove – 3
  • Cinnamon stick – ½
  • Cardamom – 1
  • Fennel seeds – ¼ tsp
  • Cumin seeds – ¼ tsp

How to make Green vegetable biryani with step by step images


  1. Wash and soak rice in water for 20 minutes.
  2. Wash and chop carrot and beans 1 inch long potato into cubes and slice onions thin. Keep it aside. Heat oil in a pan, add cumin seeds, fennel seeds, bay leaf, clove, cinnamon stick and cardamom. When aromatic add sliced onion and saute well and add ginger garlic paste. Saute well until the raw smell goes.
  3. When the raw smell of ginger garlic paste has gone add the ground mint and cilantro paste and mix well.
  4. Now add chopped veggies, green peas, salt, turmeric powder, red chilli powder, coriander powder and garam masala powder. Mix well and cook the veggies for a minute so that they get coated well in masala.
  5. When the veggies look coated in masala add soaked rice and water. Mix everything well and check for salt. Now transfer the mixture to electric rice cooker and cook till done. (If using pressure cooker cook for 3 whistles). When the rice looks done allow it to rest for 5 minutes then take it from the sides using spatula and fluff it gently. Serve it hot with raita!
