Quinoa tomato bath is a mildly spicy, slightly tangy as tomato is the key ingredient and little nutty and crunchiness from quinoa. Quinoa tomato bath is a great lunch box or one pot lunch recipe. It can be served with raita.

Quinoa tomato bath is again one such healthy and delicious preparation. I have earlier posted many interesting quinoa recipes. Most of it are with less prep/ cooking time also with everyday ingredients. This recipe is dedicated to all tomato lovers. Also for those to experiment new dishes with quinoa. Eat healthy stay healthy.

What is Quinoa?
Quinoa ( pronounced kinwa) is a naturally gluten free grain. It is rich in protein with all essential amino acids. It has very high fiber compared to any other grain, also high in minerals like magnesium and iron. Most of us are aware of the goodness of quinoa. I tried to explain a little because whenever I post quinoa recipes people ask me what is quinoa? So this explanation is for all those friends!


TIPS AND VARIATIONS


For this quinoa recipe I used 3 Cups of water to cook quinoa. I din’t want sticky quinoa but you can use more water accordingly. Also you can cook quinoa separately like rice and the add it to the tomato mixture like thokku (cutting down the water) if you run out of time.
This tomato quinoa recipe can be modified by adding whole spices instead of mustard seeds for biryani like taste and flavors.
Veggies like fresh/ frozen peas or green bell pepper can be used to make the dish healthy and more tasty.
Quinoa can be replaced with Basmati rice, Seeraga samba rice, Sona masuri rice or Millets too.

Quinoa tomato bath is a mildly spicy, slightly tangy as tomato is the key ingredient and little nutty and crunchiness from quinoa. Quinoa tomato bath acts as a great lunch box recipe or lunch and tastes great with simple raita.

Ingredients to make Quinoa tomato bath

  • 2 cups, Quinoa

  • 3 cups, Water

  • 1 nos., Onion

  • 2 nos., Tomato

  • 1 nos., Green chilli

  • 1 teaspoon, Ginger garlic paste

  • 1/4 teaspoon, Turmeric powder

  • 1 teaspoon, Red chilli powder

  • 1 tablespoon, Sambar powder (Homemade)

  • Salt – to taste

  • 1/4 teaspoon, Cumin seeds

  • Curry leaves – a sprig

  • 1 tablespoon,  Fresh Cilantro/ coriander leaves

  • 1/4 teaspoon, Mustard seeds

  • 2 teaspoon,  Oil

  • 1 teaspoon, Ghee

Directions To make tomato quinoa

  • Slice onions thin, chop tomatoes finely and make slit in the chili. Keep it aside.
  • Wash and soak quinoa in water for 15 minutes.
  • Heat oil in a pan add cumin seeds, when it crackles add onions, curry leaves and green chili. Saute well and add ginger garlic paste to it. Saute well till the raw smell goes.
  • When the raw flavor of ginger garlic goes add chopped tomato and saute for few seconds. When the tomatoes look little sauteed add turmeric powder, red chilli powder, sambar powder and salt. Mix well until raw flavors of masala goes.
  • When the raw smell has gone and when tomatoes look cooked add soaked quinoa and water. Cover it with a lid and cook in medium flame. This should take about 20 minutes.
  • After 15 minutes when the quinoa looks cooked (when white tail has appeared) and no sign of water, put off the flame. Add ghee and sprinkle some chopped cilantro and serve it hot with raita!

  • * 1 cup = 235 ml

HOW TO MAKE QUINOA TOMATO WITH STEP BY STEP IMAGES

  • Wash and soak quinoa in water for 15 minutes. Slice onions thin, chop tomatoes finely and make slit in the chili. Keep it aside. Heat oil in a pan add mustard seeds when it splutters add cumin seeds, when it crackles add onions, curry leaves and green chili. Saute well.Soak quinoa and saute onions
  • Now add ginger garlic paste to it. Saute well till the raw smell goes.Add ginger garlic paste and saute
  • When the raw  flavor of ginger garlic goes add chopped tomato, turmeric powder, red chilli powder, sambar powder and salt. Mix well until raw flavors of masala goes. Now cook the tomatoes in medium flame with lid on until soft and mushy.Add tomatoes and masala powder
  • When the raw smell has gone and when tomatoes looks mushy add soaked quinoa and water. Mix well until combined and check for salt.Add soaked quinoa and cook
  • Cover it with a lid and cook in medium flame. This should take about 15 minutes. After 15 minutes when the quinoa looks cooked (when white tail has appeared) and no sign of water, put off the flame. (It will be little sticky initially after 10 to 15 minutes the quinoa grains will stopping sticking) Add ghee and sprinkle some chopped cilantro and serve it hot with raita!Cook quinoa
