Bendakaya vepudu/ Okra fry is a common dish made in Andhra Pradesh to accompany rice. Bendakaya vepudu / okra fry is a spicy dish with crunchiness from dal and peanuts is cooked in oil without adding water. I learnt this recipe from my vadina (sister – in – law) who is an expert in making vepudu or fry. Bendakaya vepudu / okra fry is very simple to make and holds basic ingredients in its making. This recipe involves no grinding or pre preparation making it easy for beginners to cook as well. For the below recipe i have used little extra oil as it is a fry recipe. So lets get to the making!

Ingredients

  • Bendakaya/ okra – 20
  • Red chilli powder – ¾ tsp
  • Turmeric powder – ¼ tsp
  • Salt – to taste
  • Oil – 2 tbsp
  • Peanuts – 10
  • Mustard seeds – ½ tsp
  • Urad dal – 1 tsp
  • Channa dal – 1 tsp
  • Dried red chilli – 1
  • Cumin seeds – ¼ tsp
  • Curry leaves a spring

  1. Wash and chop okra. Heat oil in a pan, add cumin seeds, after it crackles add mustard seeds, after it splutters add urad dal, channa dal and peanuts. When dal turns golden brown add dried red chilli and curry leaves. When aromatic add chopped bendakaya / okra. Mix well.

  2.  Now add salt, chilli powder and turmeric powder. Mix well and slow the okra to cook in oil in medium flame without adding water. Stir it occasionally to make sure it does not burn. When okra looks cooked and the quantity looks reduced put off the flame and serve it with rice, roti or chapati.
