Vegetable paneer jalfrezi/ Vegetable jalfrezi is a semi dry flavorful Indian curry consisting of stir fried veggies and paneer in sweet, tangy and spicy sauce. This is one such popular and delicious curry that goes well with roti/ phulka and jeera rice. Jalfrezi curry can be made with just veggies like carrots, beans, capsicum/ pepper or just with paneer and sometimes with chicken too which I have not tried making but have heard from friends about it.

This is my all time go to curry since 8th grade as this dish is loaded with veggies and has an excellent flavor unlike usual curry. In few restaurants they use orange food color which I have not used instead used good color tomatoes and good quality and color chili powder to attain natural color which I think is healthy. In this recipe I have used very less number of paneer as the curry focuses on vegetables so if you are planning to make panner jalfrezi then you can use more paneer along with green and red capsicum. Ingredients

  • Veggies – 1 cup (carrot, beans and capsicum)
  • Paneer – 4 to 6 cubes
  • Onion – 1
  • Tomato – 2 (medium sized)
  • Ginger garlic paste – ½ tsp
  • Turmeric powder – ¼ tsp
  • Red chili powder – ½ tsp
  • Coriander powder – ½ tsp
  • Garam masala powder – ½ tsp
  • Salt – to taste
  • Ketchup/ Tomato sauce – 1 tbsp
  • Kasuri methi/ Dry fenugreek leaves – 1 tsp
  • Cumin seeds/ Jeera – ¼ tsp
  • Oil – 1 tbsp

* 1 cup = 235 ml

How to make Vegetable jalfrezi with step by step images


  1. In a blender add tomatoes and grind it into fine paste. Keep it aside. Chop carrot, beans and capsicum to 1 inch long and keep it ready. Slice onions thin. Cut paneer into cubes. Keep everything aside.
  2. Heat oil in a pan to it add cumin seeds/ jeera when it crackles add thinly sliced onions. Saute it well.
  3. When the onions are sauteed well add ginger garlic paste. Saute it well. When the raw smell of ginger garlic paste is gone add turmeric powder, red chili powder, coriander powder, garam masala powder and salt. give it a quick stir.
  4. Now add ground tomato paste. Give it a stir then add tomato ketchup/ sauce. Mix well and allow the mixture to cook well until the raw smell of tomatoes are gone and it gets a little dry.
  5. Now to the dry tomato mixture add chopped veggies. Saute well. This should take about 4 to 5 minutes.
  6. After the veggies are roasted well add ½ cup water and allow the veggies to cook. Don’t cook the veggies too much as we want it to be crunchy.
  7. When the veggies are getting cooked add kasuri methi and mix well.
  8. Finally add chopped paneer cubes and mix well. When the mixture gets dry put off the flame. Serve it hot with roti.
