Vegetable dum biryani, Veg dum biryani restaurant style

Vegetable dum biryani is a very flavorful and delicious biryani made with lot of veggies and basmati rice in dum style making it taste like restaurant style one. This biryani is not prepared in authentic Hyderabadi style but does taste like ones made in restaurants. All spices used in this recipe is same like usual biryani just the addition of dum method makes the rice more flavorful and appetizing. For this biryani I have not used any biryani masala nor for any of my biryani recipes but since I have getting request show biryani masala recipe, I will post the recipe sometime and also the post a biryani recipe prepared with homemade biryani masala. For the below recipe the yellow color was obtained using turmeric color and no food color was used. So lets get to the making!

Ingredients

  • Basmati rice – 1 ½ cup
  • Vegetables – 1 cup (carrot, beans, corn and peas)
  • Onion – 1
  • Ginger garlic paste – ½ tsp
  • Turmeric powder – ½ tsp
  • Coriander powder – 1 tsp
  • Red chilli powder – ½ tsp
  • Garam masala powder – 1 tsp
  • Salt – to taste
  • Coriander/ Cilantro– ½ cup
  • Oil – 1 tsp + 1 tsp
  • Ghee – 1 tsp

Whole spices

  • Bay leaf – 2
  • Star anise – 2
  • Clove – 6
  • Cinnamon stick – 2
  • Fennel seeds – ½ tsp
  • Cumin seeds – 2 tsp + ½ tsp
  • Pepper corn – 1 tsp

Note

* 1 cup = 235 ml

How to make vegetable dum biryani with step by step images


  1. Wash and soak basmati rice in water for 20 minutes. I soaked rice in 1 cup water.
  2. Heat water in a pot. When the water starts to boil add salt, whole spices and oil. Mix well and allow it to boil. When the water is rolling boil add the soaked rice. Mix well and allow it to cook till it is 80% done. Drain the water and keep the rice aside.
  3. Chop veggies and keep it aside. Now heat oil in a pan add whole spices when aromatic add sliced onions and Saute well.
  4. Now add ginger garlic paste to it and saute until the raw smell goes then add chopped coriander to it and saute till they shrink.
  5. Now add all the vegetables to it along with turmeric powder, red chilli powder, garam masala powder, coriander powder and salt and saute well.
  6. Now add 1 cup water and mix well. Allow it to cook with lid on in medium flame. This should take about 10 minutes.
  7. When the vegetables look cooked add the cooked rice over the vegetable mixture. 
  8. Gently mix the rice and veggies. Top the biryani with coriander leaves and ghee. Now place the biryani pan on top of a tawa and cook for 5 minutes in high flame and next 15 minutes in low flame. When done put off the flame and fluff the rice gently and serve it hot with raita!
