Ingredients
- Basmati rice- 2 cups
- Water- 1 ¼ cup
- Milk- 1 cup
- Onion – 1
- Beans- 8
- Carrot – 1
- Potato – 1
- Cauliflower florets – 6 to 8
- Potato – 1
- Green peas – ¼ cup
- Green chilli – 2
- Salt – to taste
- Garam masala powder – ½ tsp
- Oil – 1 tbsp
Ingredients For grinding
- Coconut- ¼ cup
- Ginger- 1 small chunk
- Garlic- 1
- Fennel seeds- ¼ tsp
Whole spices
- Bay leaf – 1
- Star anise – 1
- Clove – 2
- Cinnamon stick – 1/2
- Cumin seeds – ¼ tsp
- Cardamom – 1

How to make Vegetable brinji with step by step images

- Wash and soak rice in water for 20 minutes.
- In a blender add grated coconut, ginger, garlic and fennel seeds. Grind it into fine paste adding little water. (I used around 1/3 cup water while grinding) keep the ground paste aside.
- Now chop carrot, beans and potato into cubes. Slice onions thin and make a slit in green chilli. Blanch the cauliflower florets in hot water for few seconds and keep it aside.
- Now heat oil in a pan add whole spices, when aromatic add sliced onions and green chilli. Saute well.
- Now add chopped veggies, green peas, salt and garam masala powder. Saute the veggies in oil for a minute. When veggies look sauteed add the coconut paste and mix well. Allow it to cook till the raw smell of the paste goes. (This should take about 2 to 3 minutes in medium flame)
- Now add soaked rice, milk and water( I added 1¼ tsp cup water and 1 cup milk). Mix well and check for salt.
- Now transfer the rice mixture to electric rice cooker and cook till done.( If using pressure cooker cook for 3 whistles)When the rice is done allow it to rest for 5 minutes then fluff it with a fork or spatula from the sides and serve it hot with raita of your choice!
