Quinoa egg fried rice recipe, Indian quinoa recipes

Quinoa egg fried “rice” is a delicious and classic combination of stir fried veggies, egg and cooked quinoa. This is a healthy version of fried rice as it is contains quinoa a seed that is rich in protein and contains all 9 essential amino acids. You can try adding chicken pieces as well to make the dish more delish. I must surely say that this the best ever quinoa recipe that I have tried, cooked and tasted so far.  So below goes the recipe for simple and quick to make quinoa egg fried rice!

Ingredients

  • Quinoa – 1/2 cup
  • Water – 1 cup (to cook quinoa)
  • Chopped veggies– 1 cup (beans, carrot, onion, capsicum)
  • Egg – 1
  • Spring onion – 1
  • Salt – to taste
  • Ground pepper- ¼ tsp
  • Oil – 1 tbsp

* 1 cup = 235 ml

How to make Quinoa egg fried rice with step by step images


  1. In a pot add water and washed quinoa. Mix well and cook the quinoa in medium flame with lid on. This should take about 8 to 10 minutes. When done (quinoa should have white tail if cooked fully) put off the flame and keep the cooked quinoa aside to cool down. When quinoa is hot it will be little bit sticky after it cools down it will look like individual grains. 

  2. Slice onions thin, capsicum into julienne, chop beans, carrot and spring onion. Now heat oil in a pan, add onions, white stalk of spring onion and saute well.  Now add chopped beans, carrot, cabbage, green pepper/ capsicum saute well. This should take about just few minutes. Do not overcook it as we want the veggies to be crispy. When the veggies are getting sauteed add pepper powder and salt. Mix well.
  3. When the veggies look sauteed push them to the side of the pan then add beaten egg (I added little salt and pepper powder to the egg as well). Scramble it well and then combine it with the veggies.
  4. Now to the egg veggie mixture add cooked quinoa and toss well. When everything looks combined put off the flame. Serve it hot with ketchup.
