I’ve always loved arancini — those golden Italian rice balls with a crisp shell and a soft, cheesy heart. But this time, I wanted to do it my way. I swapped arborio rice with kodo millet, added a warm touch of kasuri methi, and tucked in a cube of melty cheddar cheese at the center.

Ingredients for the millet base:

  • 1 cup 1 Kodo millet – 1 cup (soaked for 2 hours)

  • 1 tablespoon, 1 Butter

  • 1 tablespoon, 1 Olive oil

  • ¼ cup, ¼ Onion (finely chopped)

  • 2 cloves 2 Garlic (minced)

  • ½ teaspoon, ½ Red chili flakes

  • ¼ teaspoon, ¼ Red chili powder

  • ¼ teaspoon, ¼ Garam masala

  • ½ teaspoon, ½ Kasuri methi (crushed)

  • Salt – to taste

  • 2¼ to 2½ cups, 2¼ to 2½ Water (to cook millet)

  • For the filling:
  • 10 – 12 nos. 10 – 12 Cheddar cheese – small cubes (chilled, ~1 cm)

  • For coating:
  • 1 tablespoon, 1 All purpose flour – 1 tbsp

  • 2 to 3 tablespoon, 2 to 3 Water

  • ½ to ¾ cup ½ to ¾ Crushed cornflakes (lightly crushed, not powdered)

Directions

  • Cook the millet base:
    Heat butter and olive oil in a pan. Sauté onions until soft, then add garlic and cook until fragrant. Add red chili flakes, chili powder, garam masala, and kasuri methi. Stir well.
    Add soaked and drained kodo millet. Pour 2¼ to 2½ cups water and salt. Cook covered on low flame until millet is soft and slightly mushy (like risotto). Turn off the heat and let it cool.
  • Mix & shape:
    Once the millet mixture cools, mix in Parmesan if using. Scoop a small portion, flatten it, place a cheddar cube inside, and shape into a ball. Repeat for all.
  • Coat:
    Make a thin slurry with all purpose flour (maida) and water. Dip each ball into the slurry, then roll in crushed cornflakes. Set aside on a tray.
  • Chill:
    Refrigerate the coated arancini for 10–15 minutes to firm them up.
  • Air-fry:
    Preheat air fryer to 200°C (400°F). Place arancini in the basket with space between each. Air-fry for 10–12 minutes, flipping halfway, until crisp and golden.
  • Serving Suggestions
    Serve hot with mint chutney, spicy tomato dip, or even classic marinara.
