Ingredients
- Basmati rice – 2 cups
- Soya chunks – 1 cup
- Onion – 1
- Tomato – 1
- Green chili – 2
- Mint – 1 cup
- Ginger garlic paste – 1 tsp
- Red chili powder – 1 tsp
- Garam masala powder – ½ tsp
- Coriander powder – ½ tsp
- Turmeric powder – ¼ tsp
- Curd – 2 tbsp
- Oil – 1 tbsp
- Salt to taste

- Bay leaf – 2
- Star anise – 1
- Clove – 3
- Cinnamon stick – ½
- Cardamom – 1
Ingredients to cook soya chunk
- Soya chunk – 1 cup
- Water – 2 cup
- Milk – 1 tsp

How to make soya biryani with step by step images

- Heat water in a pan/ pot. When you see the water rolling boil add the soya chunks in it and cook for 1 to 2 minutes then add milk to it and put off the flame.
- Now drain the excess water from the soya chunks using strainer / colander and keep it aside.
- Wash and soak rice in water for 20 minutes. Slice onions thin, chop tomatoes and mint, make slit in green chili and set aside.
- Heat oil in a pan add whole spices when aromatic add sliced onions and green chili ; Saute well. Now add ginger garlic paste to it and saute until the raw smell goes then add chopped mint to it and saute till they shrink.
- Now add chopped tomatoes to it along with all the dry powders including salt and saute well. When the tomatoes become mushy add curd give it a stir and add soya chunks to it and mix everything well.
- Add soaked rice and water to it and transfer it to electric rice cooker and cook till done. (If using pressure cooker cook for 3 whistles).
- Serve it hot with onion raita!
