Foxtail millet dosa without rice, Thinai dosa recipe

Foxtail millet dosa/ Thinai dosa is a tasty golden brown crispy South Indian crepe prepared with Foxtail millet. In this recipe I have added no rice yet makes soft idli’s and golden crispy dosas. I prepared this batter in blender and it turned out really good just like wet grinder.
As we all know that millets in general are super healthy and foxtail millet is rich in fiber, protein, iron, calcium and potassium. This thinai millet is gluten free which makes it easily digestible. So adding in this in our diet adds benefits to our health. I will add a short snippet of the making this soon (amateur video), hope it helps beginners. So let’s get to the making of Foxtail millet dosa/ Thinai dosa!

Ingredients
  1. 1. Foxtail millet/ Thinai – 2 cups
  2. 2. Poha/ Flattened rice/ Aval – ½ cup
  3. 3. Whole urad dal – ½ cup
  4. 4. Salt – 2 tsp
  5. 5. Water – for grinding
Note
  1. * 1 cup = 235 ml
Instructions
  1. In a bowl add Foxtail millet/ Thinai, whole urad dal dal and poha together. Wash 3 to 4 times until you see clear water. Soak it in enough water for 3 to 4 hours.
  2. After 4 hours, in a blender/ wet grinder add little quantity of the soaked Urad dal, Foxtail millet/ Thinai and poha. When it starts grinding gradually add little by little of all the soaked items. Grind the mixture into a smooth, thick and fluffy batter with adding water in regular intervals when needed. I used 1 to 1½ cups of water for grinding but it may vary according the soaking time. But the measurement is just a guideline to get a perfect batter.
  3. When done grinding transfer the mixture to a bowl, add required amount of salt and mix well
  4. Allow the batter to ferment for 4 to 6 hours as millet batter ferments really quick than regular batter.
  5. In the morning give the batter a good stir and check the consistency of the batter. If it is little thick add around ¼ cup water to make a flowing consistency batter which will yield perfect crispy dosa.
  6. Now heat a dosa tawa, to the pour a ladle of batter and spread it like regular dosa batter. Drizzle few drops of oil and cook dosa in medium flame. When sides brown flip the dosa gently and cook till done. When dosa looks done transfer it to a plate and serve it with chutney of your choice!
