Air fryer corn manchurian/ Air fryer crispy corn manchurian is a sweet, spicy, and slightly tangy appetizer/ side that can be served with noodles/ fried rice. We have all relished manchurian prepared with gobi, baby corn, vegetables, soya, fish and paneer too but thought to try something different yet very easy yet interesting recipe and here it is the corn manchurian prepared with sweet corn. This manchurian is Air fryer version as the corn bursts a lot while frying in oil so for safety reasons.

So even in Air fryer I was able to hear popping sounds, which kind of scares but after all that popping sounds (happening inside the air fryer)  when these Air fried corn are tossed in the sauce they taste amazing just like fried version or regular manchurian. In this air fryer crispy corn manchurian recipe I have used yellow and red capsicum but you could use any color of your choice. So whenever you get hold of corn make sure to try this recipe which will be adored by all. So let’s get to the making of air fryer crispy corn manchurian.

Ingredients
  1. 1. Corn - 1 cup
  2. 2. Salt – to taste
  3. 3. Pepper powder – a pinch
  4. 4. Maida – ¼ cup
  5. 5. Corn flour – ¼ cup
  6. 6. Oil – 1 tsp
FOR SAUCE
  1. 1. Onion – 1 (small sized, cut into cubes)
  2. 2. Chopped ginger and garlic – 1 tbsp
  3. 3. Green/ Red / Yellow capsicum – 1/3 cup (cubes)
  4. 4. Green chilli – 2
  5. 5. Ketchup/ Tomato sauce - 1 tbsp
  6. 6. Red chili sauce – 1 tbsp
  7. 7. Soy sauce – 1 tsp
  8. 8. Salt – to taste
  9. 9. Spring onion – 1
  10. 10. Corn flour – 1 tbsp
  11. 11. Water – ¼ cup
  12. 12. Oil – 2 tsp
Note
  1. * 1 cup = 235 ml
Instructions
  1. Heat water in a pan to it add salt and corn. Boil it in hot water for 2 to 3 minutes. After 2 to 3 minutes drain the water and keep the corn aside.
  2. In a wide bowl add boiled corn, maida, corn flour, oil, pepper powder and salt. The water in the corn will be sufficient to coat the corn with flour. It will just coat the corn and will not hold shapes like pakora batter. Mix well and keep it aside for 5 minutes for the flour to hold.
  3. Now preheat air fryer at 400F for 5 minutes. When the air fryer is preheated brush a tbsp oil on the baking rack (prevents corn from sticking) spread the corn evenly without overcrowding as the inside might not get cooked fully in the mentioned time. Brush a tbsp oil if necessary. Now cook for 8 minutes.
  4. After 8 minutes remove the rack from the air fryer and shake the rack once then air fry for 4 minutes to get perfectly cooked crispy corn. After 4 minutes remove the corn from air fryer and keep it aside. Repeat the process till all the corn are air fried.
  5. In a bowl add corn flour and 1/4 cup water. Mix well and keep the mixture/ slurry aside.
  6. Chop onion and green capsicum into cubes, make slit in green chilli and chop spring onion finely both white and green stalk. Heat a tbsp of oil in a pan to it add finely chopped garlic and ginger. Saute well in high flame.
  7. Now add chopped white stalk of spring onion and green chili. Saute well then add chopped onion cubes and capsicum cubes. Saute in high flame for few seconds.
  8. Now add salt, tomato sauce/ ketchup, red chili sauce and dark soy sauce. Mix well.
  9. Now add the cornflour mixture/ slurry and stir continuously. If required add ¼ cup water and mix well. Now add air fried corn to it add red chili sauce if you want it to be more spicy. Toss it well in the sauce. When the corn is well coated in sauce add chopped green stalk of spring onion. Put off the flame and serve it hot with noodles or fried rice.
