Are you a seafood lover? Then you will surely love it!! Shrimp fried rice/ Prawn fried rice is a quick and easy to make one pot wonder/meal that is super yummy and tummy filling as well. This flavorful rice dish is typically prepared with eggs/ veggies/ meat and veggies combined but thought to give it an interesting yet safe twist so tried with sea food and I should say it turned wonderful. This flavorful fried rice can be consumed just like that or accompanied with some Manchurian or a simple siracha/ ketchup to make it more yummy.

So this fried rice is made with typical ingredients like onions, cabbage, eggs , shrimp etc but you can try adding some more veggies like peas and carrot as well to keep it more healthy. You can flavor it with dark soy sauce to flavor and give the dish a nice color, I used only light soy sauce as I had only that with me during this lockdown and prepared with it. You could add little bit vinegar as well to give it restaurant touch. For this shrimp fried rice recipe I used small prawns, but you make it with big ones as well which will taste yum. So let’s get to the making!

Ingredients
  1. 1. Shrimp – ½ cup
  2. 2. Cooked basmati rice – 1½ cup
  3. 3. Eggs – 2
  4. 4. Cabbage – ¼ cup (julienne/ shredded)
  5. 5. Green capsicum – ¼ cup (thin slices)
  6. 6. Onion – 2 tbsp (thin slices )
  7. 7. Spring onion – 1
  8. 8. Salt – to taste
  9. 9. Pepper powder – ½ tsp
  10. 10. Soy sauce – 1 tsp
  11. 11. Oil – 2 tbsp + 2 tsp
  12. 12. Garlic - 1 (pearl)
Note
  1. * 1 cup = 235 ml
Instructions
  1. Devein and clean the shrimp. Keep it aside. Now to the cleaned shrimp add salt and pepper powder. Marinate for 10 minutes.
  2. Heat oil in a pan to it add chopped garlic, saute well the add the marinated shrimp. Cook the shrimp well. When the shrimp is almost cooked add pepper powder. Mix well. Shrimp gets cooked in 4 to 5 minutes so do not overcook it as it will be rubbery. When the shrimp looks cooked keep it aside.
  3. Now heat oil in another pan, break eggs add little salt and pepper powder. Beat the eggs well.
  4. Heat oil in a wok/ pan, when the oil is very hot add the egg mixture. Scramble eggs well. Keep it aside.
  5. Heat oil in a wok/ pan, when the oil is very hot add all the chopped veggies ( white part of spring onion onion, capsicum snd cabbage) and little salt. Saute well for a minute or 2 on high flame only as the veggies will get soggy/ leave water in low flame. Since the veggies are finely chopped they will be cooked fast on high flame. When aromatic and when veggies look cooked add cooked shrimp, scrambled eggs and soy sauce. Mix well. Now finally add rice, salt and pepper powder. Toss the rice well. Do not over mix as the rice texture is very important. Switch off the flame and garnish with few chopped green stalks of spring onion. Serve it hot with ketchup or manchurian!

How to make Prawn fried rice with step by step images
