Lemon oats is a simple, delicious and quick to make healthy recipe that can be made in jiffy for breakfast. Oats as we all know is cereal grain containing several essential nutrients needs to be in our diet in any form. A simple porridge either in sweet or savory version can be very boring so I try making Indian version with oats to make it relishable and appealing. Lemon oats is mildly tangy, lightly spicy and crunchy to eat healthy breakfast that needs no pre preparation and no special technique or ingredients. For the below recipe I used instant oats as it takes less time to cook. So lets get to the making!

Ingredients
- 1. Oats – 1 cup
- 2. Water – ¾ cup
- 3. Mustard seeds - ½ tsp
- 4. Urad dal – 1 tsp
- 5. Channa dal – 1 tsp
- 6. Peanuts – 1 tbsp
- 7. Dried red chilli – 2
- 8. Lemon – ½ piece
- 9. Turmeric powder – ¼ tsp
- 10. Salt – to taste
- 11. Curry leaves – spring
- 12. Oil – 1 tsp
Note
- * 1 cup = 235 ml
Instructions
- Heat oil in a pan add mustard seeds when it splutters add urad dal and channa dal. When dal turns golden brown add dried red chilli, peanuts and curry leaves when aromatic add salt and turmeric. Give it a quick stir and add water.
- Mix well and allow it to boil well. When the water starts to boil add oats and mix well. Allow the oats to cook in medium flame with lid on. It should take about 8 minutes to cook. Give it a stir occasionally and sprinkle water now and then so it does not get burnt.
- After 8 to 10 minutes squeeze in some lime juice and fluff the oats gently. Put off the flame and serve it hot!

- Now add water to it. Mix well and allow it to boil well. When the water starts to boil add oats and mix well. (I used 3/4 cup water only as I dint want it to be soggy)
- Mix well and allow the oats to cook in medium flame with lid on. It should take about 8 minutes to cook. Give it a stir occasionally and sprinkle water now and then so it does not get burnt. After 8 to 10 minutes squeeze in some lime juice and fluff the oats gently. Put off the flame and serve it hot!
