Curd quinoa / Quinoa curd bath is such a summery, healthy and lip smacking light dish prepared with quinoa and curd. Quinoa, since I have mentioned many times about its benefits I m not going to explain it again and bore so lets straight away jump into the recipe. Curd quinoa a delish recipe is prepared by adding tempered curd mixture to cooked quinoa making an excellent healthy summer treat accompanied with papad, pickle and fried sun dried curd chilli can fill the day with so much energy. Yes any number of dishes made with this quinoa turns amazingly tasty and as I always say good things and good food can come in any form. So if you are looking for an healthy, yet tasty and quick to make lunch box recipe/ lunch to beat the heat this curd quinoa will do that job quickly. So lets get to the making!

Ingredients

  • Quinoa – ½ cup
  • Water – 1 cup
  • Curd – ¾ cup
  • Milk – ¼ cup
  • Salt- to taste

Ingredients To temper

  • Mustard seeds – ½ tsp
  • Urad dal- 1 tsp
  • Dried red chilli – 1
  • Sun dried curd chilli – 1 (optional)
  • Oil – 1 ½ tsp
  • Green chilli- 1
  • Ginger- ½ tsp (chopped)
  • Curry leaves – a spring
  • Chopped cilantro- 1 tbsp
  • Grated carrot – 1 tbsp
  • Hing- a pinch

How to make Curd quinoa with step by step images


  1. Wash and soak 1/4 quinoa in water for 10 minutes. After 10 minutes drain the water and keep the quinoa side. Chop green chilli, ginger and cilantro.
  2. Heat a pan add soaked quinoa along with soaked water. Allow it to cook well with lid on in medium flame. This should take about 10 to 12minutes. When the quinoa looks cooked and dry put off the flame and keep it aside.
  3. When the quinoa is warm transfer the cooked to a bowl to it add salt and curd. Mix it really well. Now add milk to the curd quinoa. Adding milk adds taste to this dish and also helps maintaining the consistency when packed in lunch box.
  4. Now mix this well. Heat oil in a small pan, add mustard seeds, when it splutters add dried red chilli, urad dal when it turns golden brown add chopped green chilli, chopped ginger, hing and curry leaves. When aromatic add the mixture to the curd quinoa mixture along with chopped cilantro and grated carrot. Mix well. To get nice flowing consistency you can add little more milk/ water. Serve it with chopped cilantro, fried sun dried chilli and grated carrot along with some with pickle.
