Spaghetti recipe, Indian style tomato spaghetti

Spaghetti is a well known popular Italian dish prepared by tossing cooked pasta in simmered tomato homemade sauce that can be easily prepared with ingredients that are always available in the pantry. This is a vegetarian spaghetti recipe where it cuts downs the traditionally added meat balls/ meat and I can confidently tell its my handy recipe that I can whip up easily on dull days as I have been preparing spaghetti with the same recipe for the past 8 years. All you need is to put all the ingredients in pan and simmer it for 25 minutes and voila yummy spaghetti will be ready in no time. So talking about the consistency and color for the sauce for which I have used ripe red colored tomatoes which I  pureed and simmered. Do try this recipe at home and let me know your feedback. 1. Heat light olive oil in a pan and add chopped garlic, saute for few seconds. Now add chopped onions to it and saute well.
  2. When the onions look sautéed add italian seasoning and red chilli flakes. Saute well for a minute.
  3. Now add the ground tomato puree ( In a blender add tomatoes and puree it) and salt to the sauteed onion mixture. Mix well and put the lid on and cook the mixture in low to medium flame for 25 minutes until the oil oozes in the sides. Give it a occasional stir.
  4. Meanwhile, In a pot add water, oil and salt. Mix well and allow it to boil well. When the water is rolling boil add uncooked spaghetti pasta, mix well and cook till done (This should take about 10 to 12 minutes).
  5. When it looks cooked drain the water and run the cooked pasta in regular water and keep it aside. This helps pasta from sticking to one another.
  6. After 25 minutes when the oil oozes in the sides and you see bright red color of the sauce check for the desired consistency. If your mixture looks little dry add little water and allow the mixture to boil. When the spaghetti sauce is ready add cooked pasta and toss well. Switch off flame and garnish it with chopped parsley and parmesan cheese. Serve it hot.
