Ingredients to make Besan Puri

  • ½ cup, ½ Besan (gram flour)

  • 1 cup, 1 Wheat flour / Atta

  • 1 tablespoon, 1 Rava (semolina), for crispness

  • ½ teaspoon, ½ Ajwain (carom seeds)

  • ¼ teaspoon, ¼ Haldi (turmeric powder)

  • ½ teaspoon, ½ Red chili powder

  • Salt, to taste

  • 1 tablespoon, 1 Oil (for the dough)

  • Oil, for frying

  • ½ cup to ¾ cup, ½ cup to ¾ Water, as needed

Directions to make Besan Poori

  • Make the Dough
    Mix wheat flour, besan, ajwain, salt, turmeric, and chili powder. Add water little by little and knead into a firm, smooth dough — the perfect base for soft, warm winter pooris.
  • Roll the Pooris
    Pinch small balls from the dough and roll them into medium-thick circles. Not too thin, not too thick — just right for a beautiful puff.
  • Fry Until Golden
    Slide each rolled poori into hot oil, let it puff up, flip, and fry until golden and crisp. Remove and enjoy the warm, comforting goodness right away!
