Idli fry is a super quick to make delicious snack where leftover idli’s are fried to perfection and relished with idli podi. This recipe requires not much ingredients or time to prepare but still tastes delish. This recipe is most useful when idli’s turn hard or idli’s made with last set of batter or week old batter.  We are all used to making recipes like:

Ingredients
  1. 1. Idli – 4
  2. 2. Idli podi – ½ tsp
  3. 3. Curry leaves – a sprig
  4. 4. Oil – for deep frying
Note
  1. * 1 cup = 235 ml
Instructions
  1. Refrigerate the leftover idli for an hour or so. Refrigeration helps idli absorb less oil. Heat oil in a deep frying pan. Take refrigerated idli and slice them as shown in collage. Do not slice them too thin as they will break easily.
  2. When the oil is hot enough add the idli slices one by one. Fry it in medium flame until golden brown. When golden brown remove idli from oil. Now put off the flame. Chop curry leaves into finely and add it to oil. When they turn holden brown remove it immediately. Now arrange the fried idli in a plate, on it sprinkle fried curry leaves and little idli podi. Serve it hot!

How to make Idli fry with step by step images
