Indian chicken puffs recipe, Chicken puff pastry

Indian Chicken puffs/ Chicken puff pastry is a a super flaky and scrumptious snack prepared by stuffing flavorful spiced chicken mixture in puff pastry sheets and baked to perfection. Yes an easy and and very quick to make Indian snack. That is also a crowd pleaser can be a great addition to any party or potluck.

For this chicken puffs I cooked chicken in the recipe in Air fryer but you can cook the same in a pan without adding water. Also this time I used store bought puff pastry sheets but if you would like to make one scratch here is the recipe 15 minute puff pastry sheet. Indian Chicken puffs/ Chicken puff pastry is a a super flaky and scrumptious snack prepared by stuffing flavorful spiced chicken mixture in puff pastry sheets and baked to perfection.

FOR MARINATION

  • 4 pcs, Chicken breast

  • 1/2 teaspoon, Ginger garlic paste

  • 1/4 teaspoon, Turmeric powder

  • 1/2 teaspoon, Red chili powder

  • Salt – to taste

  • FOR PUFFS
  • 4 nos., Puff pastry sheets

  • 1 nos., Onion – 1 (small sized, finely chopped)

  • 1/2 teaspoon, Red chilli powder

  • 1/8 teaspoon, Turmeric powder

  • 1/2 teaspoon, Coriander powder

  • 1/2 teaspoon, Garam masala powder

  • Salt- to taste

  • 1 tablespoon, Oil

  • 1 tablespoon, Oil (for air frying) optional

  • 1/4 cup, Milk – ¼ cup (for milk wash)

Directions to make Indian chicken puffs

  • Take the chicken breast tender slices and chop them into small cubes. Transfer the chicken cubes to a bowl to it add salt, chili powder and ginger garlic paste. Mix well and marinate for 20 to 30 minutes. Remove the puff pastry from freezer and leave it in room temperature so that if puffs up well as seen in the picture.
  • Preheat Air fryer at 350F/ 180C for 5 minutes. ( I have CRUX air fryer at home and the below mentioned cook time suits me, timing may vary a little according to the brand)
  • When the air fryer is preheated brush a tbsp of oil on the baking rack/ place a parchment paper on the baking rack (prevents chicken from sticking) then place the chicken pieces one by one evenly without overcrowding. Now Air fry for 5 minutes.
  • After 5 minutes remove the rack from the air fryer and flip the chicken gently and cook for 1 more minute again. After 6 minutes you will notice that the chicken is evenly and cooked. If its undercooked cook for another 1 minute or 2. Cook time might differ slightly for each air fryer brand so air fry it accordingly. When chicken pieces are cooked remove from the Air fryer and keep it aside for 5 to 10 minutes for it to cool down.
  • After 5 to 10 minutes add the air fried chicken pieces in the blender and blend it to tiny crumbs as shown in the picture. Keep it aside.
  • Heat 2 tsp oil in a pan, to it add chopped onion and saute well. When the onions look sauteed add ginger garlic paste. Saute well.
  • When the raw smell is gone add red chili powder, turmeric powder, coriander powder, garam masala powder and salt to taste. Saute for few seconds then add minced chicken. Mix the mixture well until it is combined. Cook the mixture for a minute then put off the flame and keep the mixture aside to cool down.
  • Preheat oven at 400 F. Now take one pastry sheet and place it on the baking tray on it place some chicken mixture in the middle of the pastry. Now fold it and seal the edges with water and press it well. Make the remaining puffs the same way. Now milk wash it using a basting brush. (Dip the brush in milk and apply it over puffs. The process is known as milk wash to yield golden brown exterior)
  • Now place the baking tray in preheated oven and bake at 400F for 20 minutes or until you see the puffs in golden color with flaky texture. When done remove the baking tray from the oven and serve it hot with chai and ketchup.

  • * 1 cup = 235 ml
