Instant pot palak khichdi/ Palak khichdi is one such winter special lip smacking lentil based one pot meal that is super healthy and nutritious. Yes this is one such recipe that is super quick to prepare and is something similar to South Indian VEN PONGAL and SAMBAR SADAM. I might have not presented it that well but it tastes super amazing couldn’t resist while clicking pictures and hence was not much interested in the pics😜😜

I always love to make khichdi/ pongal in INSTANT POT as the consistency is always right and is a mess free job compared to the pressure cooker method. This khichdi can be prepared without palak puree- a basic version and much healthy version by adding veggies. In this recipe I have prepared palak khichdi with basmati rice and moong dal for extra flavors but you can prepare it with regular/ short grain rice as well. So for now let’s get to the making of INSTANT POT PALAK KHICHDI!!

Ingredients
  1. 1. Basmati rice – 1 cup
  2. 2. Moong dal – ½ cup
  3. 3. Water – 5 cups
  4. 4. Onion – 1 (small sized)
  5. 5. Tomato – 1
  6. 6. Ginger garlic paste – ½ tsp
  7. 7. Palak/ Spinach – 2 cups
  8. 8. Green chili - 1
  9. 9. Salt – to taste
  10. 10. Jeera/ Cumin seeds – ½ tsp
  11. 11. Turmeric powder – a pinch
  12. 12. Chili powder – ½ tsp
  13. 13. Garam masala powder – ¼ to ½ tsp (optional)
  14. 14. Ghee – 2 tbsp
Note
  1. * 1 cup = 235 ml
Instructions
  1. In a bowl add basmati rice and moong dal. Wash it throughly and soak it in 2 cups of water for 10 to 20 minutes. (Meanwhile you can chop veggies)
  2. In a blender add washed palak and green chili. Grind into paste adding little water.
  3. Now put instant pot on SAUTE MODE high. Now add ghee, when it hot add jeera/ cumin seeds, when it aromatic add chopped onion. Saute well and add ginger garlic paste to it. Saute well till the raw aroma goes.
  4. When the raw aroma of ginger garlic paste has gone add finely chopped tomato. Mix well and add red chilli powder, garam masala powder and salt. Mix well. When the tomatoes are sauteed well add the palak puree. Mix well.
  5. Now add the soaked rice mixture in IP. Add 3 more cups of water and required amount of salt. So totally we have added 5 cups of water. Mix well and put the lid on.
  6. Now switch to PRESSURE COOK/ MANUAL MODE for 4 minutes. Keep the valve in sealing mode.IP will start countdown after 5 to 10 minutes only.
  7. Now when the timer is done do a natural release for 10 minutes or QUICK RELEASE by pushing valve to VENTING POSITION. Be careful while doing this as gush of hot steam will be emitted so keep your face far.
  8. Now after the pressure is released open the lid and you will see perfectly cooked rice and dal. Now just mix it with a spatula and you will see rice and dal getting mashed easily without having to put any pressure. Then add a cup of water if required and switch on "SAUTE MODE" and let the mixture boil for a minute then delicious palak khichdi is ready. Serve it topped with a tbsp of ghee along with papad and pickle.
