Millet sambar sadam, How to make millet sambar rice

Millet sambar sadam/ Kuthiraivali sambar sadam/ Barnyard millet sambar rice is a simple and quick to make Tamil Nadu style one pot meal. It is prepared with millet/ Barnyard millet, toor dal and veggies.

Traditionally sambar sadam is prepared with rice. But to keep it more healthy and to get back to roots I made sambar sadam with barnyard millet/ kuthiraivali. It is a millet variety that is rich in fiber, iron and is also less in calories compared to rice which is good right?


Trust me this version sambar sadam is tasty and healthy. It won’t even be found that it is made with millets. Barnyard millet tastes close to rice so the sambar sambar tastes same like the one made with rice.

I usually make sambar sadam/ sambar rice in INSTANT POT. Instant pot does the job perfect but if you don’t use instant pot you can make this in pressure cooker too. So I have directions mentioned below for both instant pot and pressure cooker. Hope it helps.

Millet sambar sadam/ Kuthiraivali sambar sadam/ Barnyard millet sambar rice is a simple and quick to make Tamil Nadu style one pot meal prepared with millet/ Barnyard millet, toor dal and veggies.

Ingredients to make Millet sambar sadam

  • 1 cup, Barnyard millet/ Kuthiraivali

  • 1/2 cup, Toor dal

  • 1 nos., Carrot (small)

  • 10 nos., Green beans

  • 1 nos., Potato

  • 8 pieces, Drumstick

  • 1 nos., Onion (small)

  • 1 nos., Tomato

  • Tamarind – small gooseberry size

  • 1/4 teaspoon, Turmeric powder

  • 1 teaspoon, Red chilli powder

  • 1 tablespoon, Sambar powder

  • 1/2 teaspoon, Coriander powder

  • Salt – to taste

  • 1 tablespoon, Ghee

  • TO TEMPER
  • 1/2 teaspoon, Mustard seeds

  • Curry leaves – a sprig

  • 2 nos., Dried red chilli

  • 1/2 teaspoon, Cumin seeds/ Jeera

  • 2 tablespoon, Oil

Directions to make MILLet sambar rice

  • Wash barnyard millet/ Kuthiraivali and toor dal in water. Soak millet and toor dal together in water for 15 minutes.
  • Soak tamarind in ½ cup warm water and extract tamarind juice and keep it aside. Chop veggies and keep it aside.
  • Heat oil in a pressure cooker to it add mustard seeds and dry red chili when it splutters add mustard seeds when it splutters add cumin seeds, when it crackles add all the curry leaves and chopped onion cubes. Saute well.
  • When onions look sauteed add the chopped veggies ( carrot, beans, potato, drumstick and tomato) Saute it for a minute then add turmeric powder, coriander powder, red chilli powder, sambar powder and salt. Saute well for a minute then add tamarind extract. Mix well.
  • Now add soaked millet and toor dal. Now add 4 to 5 cups of water and mix everything well. Check for salt. When the mixture starts to boil close the cooker lid and put whistle. Pressure cook in low to medium flame for 3 whistles.
  • After 3 whistles and after the pressure has subsided completely open the cooker lid and you should see the the perfectly cooker millet, dal and veggies. If your mixture looks thick add a cup of water to loosen it up to get right consistency. Put on the flame and add little ghee. When the mixture starts to boil put off the flame and delicious sambar sadam is ready to be served with chips.
  • DIRECTIONS TO MAKE MILLET SAMBAR SADAM IN INSTANT POT
  • Now put instant pot on SAUTE MODE high.
  • Now add oil when it hot add mustard seeds when it splutters add cumin seeds, when it crackles add curry leaves and chopped onion. Saute for few seconds then add all the chopped veggies including and tomato. Saute it for few seconds say 30 seconds then add turmeric powder, coriander powder, red chilli powder, sambar powder and salt. Saute well for another 30 seconds then add the tamarind extract. Mix well and add soaked millet, toor dal and 5 cups water. Mix everything well. Check for salt.
  • Now switch off the saute mode. Put the lid and keep the vent to sealing position.
  • Now press MANUAL/ PRESSURE COOK mode high. Make sure the Cook for 6 minutes. I cooked it for 6 minutes as I wanted the rice really mushy.
  • After 6 minutes do either natural release for 15 minutes or quick release by putting the valve to venting position which releases steam immediately. Make sure to keep your face far from it and side ways as a huge amount of pressure will be released.
  • Now open the lid and your rice dal and vegetables will be cooked perfectly. Just mix it once and millet dal mixture will get mashy. You will find perfect millet sambar sadam with flowing consistency.
  • Meanwhile switch on the stove, place heat oil/ ghee in a small pan add mustard seeds when it splutters add dried red chilli add curry leaves. Now pour this mixture to sambar sadam mixture in instant pot. Add little ghee and delicious millet sambar sadam is ready!

Notes

  • * 1 cup = 235 ml

HOW TO MAKE MILLET SAMBAR SADAM WITH STEP BY STEP IMAGES
