Osmania biscuit recipe, Homemade osmania biscuits

Osmania biscuit is one such super popular and delicious short bread kind biscuits originating in Hyderabad and named after the last ruler Osman Ali khan. This melt in mouth biscuit is super famous in Irani cafes of Hyderabad and slurping a sip of tea and having a bite of homemade osmania biscuits is one such delicious combination made in heaven I should say.

This osmania biscuit is prepared with mixture of ingredients like maida, milk powder, custard powder, sugar, butter, cardamom powder and dunked in saffron milk before baking. This recipe comes from a series of my friends who studied in school with me in Dubai, typical Hyderabadi girls from those we have these delicious biscuit recipe in our blog. Thank you girls!

Some information from them, I thought I will pass on to you as well, these biscuits are made with dalda/ vanaspathi which is not good for health so instead used butter at room temperature, also uses extra quantity of baking powder for their rise, also this biscuit can be prepared with salted butter as well, as these are sweet and salty biscuits.

We get these osmania biscuits in one café here and the biscuits made with this recipe tasted close to it, we enjoyed with homemade adhrak chai. I am sure after you guys try this recipe at home you guys will enjoy it too. So let’s get to the making!

Ingredients
  1. 1. Maida/ All purpose flour – 1 cup
  2. 2. Milk powder – 1 ½ tbsp
  3. 3. Custard powder – 1 ½ tbsp
  4. 4. Powdered sugar – ½ cup
  5. 5. Salt – ¼ tsp
  6. 6. Cardamom powder – ¼ tsp
  7. 7. Butter – ½ cup (at room temperature)
  8. 8. Baking powder - ½ tsp
  9. 9. Milk – ¼ cup (warm)
  10. 10. Saffron strands – few
Note
  1. * 1 cup = 235 ml
Instructions
  1. In a cup add warm milk to it add saffron strands and mix well. Keep it aside.
  2. In a bowl add butter and powder sugar. Cream it well either with hands/ whisk. This should take about a minute.
  3. Now to the butter mixture add custard powder, milk powder and salt. Mix well until combined.
  4. Now to this mixture add maida/ all purpose flour and cardamom powder. Mix well until it forms a dough. The dough will be cracky one and that’s what we want.
  5. Now place a parchment paper and sprinkle some flour on it. Now transfer the dough onto the parchment paper. Place a butter paper/ wax paper/ parchment paper on a baking tray. Keep it aside. Preheat oven at 180C/ 350F.
  6. Flatten the whole ball of cookie dough using a rolling pin to ½ inch thickness. Now place the round shaped cookie cutter/ cap/ anything round shaped on the flattened cookie dough and cut as many as round shape. Once you remove the round shaped dough place it one by one with enough spacing between each cookie on the baking tray lined with parchment paper/ wax paper. Now make a dough with remaining dough crumbles and repeat the process till all the cookie/ biscuit dough is complete.
  7. Now apply saffron milk to each round shaped cookie dough as shown in the collage.
  8. Place the baking tray in the preheated oven and bake the cookies/ biscuits for 15 minutes. When sides are browned remove the biscuits from oven, place it on a cooling tray for it to cool down. Initially when the cookies are taken from oven they will be soft and fragile as they cool down they will harden. When the biscuits have cooled serve them with tea/ coffee and store the remaining cookies in air tight container.
