Potato puffs/ Aloo puff is a popular Indian snack prepared by filling puff pastry sheets with spicy mashed potato mixture and baked to perfection. I never knew that there was something called aloo puffs until last year when I noticed in a café. We all/ I am used to typical veg puffs/ egg puffs/ chicken puffs but puffs with all time favorite veggie potato was a must try I thought and wished to taste it and it was super yum. Since it is lockdown and the climate was super cold last week thought to bake these puffs with potato filling as I don’t like making/ having much of fried food. I made the filling according to what I felt was there in the shop’s puffs, wont say it was same but close to its taste and was surely delish. So I had some leftover puff pastry sheets at home after making veg puffs so made use of those to make these potato puffs. In this recipe I have used very less quantity of ginger garlic paste as I dint want its flavors to be dominating in the puffs. Ingredients
  1. 1. Puff pastry sheets - 6 to 8 nos.
  2. 2. Potato – 2 (medium sized, boiled, mashed)
  3. 3. Onion – 1 (small sized)
  4. 4. Ginger garlic paste – ¼ tsp
  5. 5. Turmeric powder – ¼ tsp
  6. 6. Red chili powder – ½ tsp
  7. 7. Coriander powder – ½ tsp
  8. 8. Cumin powder – ½ tsp
  9. 9. Salt – to taste
  10. 10. Cumin seeds – ½ tsp
  11. 11. Oil – 1 to 2 tsp
  12. 12. Milk - ¼ cup (for milk wash)
Note
  1. * 1 cup = 235 ml
Instructions
  1. Firstly take the pastry sheets out of the freezer and keep it at room temperature so that it will be thawed by the time we prepare the veggies/ filling.
  2. Heat oil in a pan add cumin seeds, when it crackles add minced ginger garlic and saute well. When raw smell is gone add finely chopped onion. Saute well and add turmeric powder, salt, chilli powder, cumin powder and coriander powder. Saute well for few seconds till the raw smell of the masala is gone. After a minute of sauteeing add mashed potato. Mix well until combined. When combined well check for salt and put off the flame. Keep the mixture aside. Allow it to cool down completely.
  3. Preheat oven at 400 F. Now take one pastry sheet place it on the baking tray on it place some potato mixture in the middle of the pastry. Now fold it and seal the edges with water and press it well. Make the remaining puffs the same way. Now this step is optional, milk wash it using a basting brush. (Dip the brush in milk and apply it over puffs. The process is known as milk wash to yield golden brown exterior)
  4. Now place the baking tray in preheated oven and bake at 400F for 20 minutes or until you see the puffs in golden color with flaky texture. When done remove the baking tray from the oven and serve it hot with chai and ketchup.
