Thinai vadai/ Foxtail millet vada is a deep fried fritter/ snack prepared with foxtail millet, toor dal and ginger and red chilli for flavor and spiciness. Yes you heard it right! Though it has the appearance of a traditional masala vadai its made with toor dal and tastes absolutely yummy. As we we all know that millets in general are super healthy and foxtail millet is rich in fiber, protein, iron, calcium and potassium. This thinai millet is gluten free which makes it easily digestible. So adding in this in our diet adds benefits to our health.

This recipe was sent to me by mom, and I couldn’t resist making it as it has been raining heavily here and such fritters are bliss to eat with hot chai. This recipe is very easy to make just like traditional dal vada just some soaking, grinding, shaping and frying. For this recipe I used only 1 dry red chili as the chili that I use is very very spicy, you can try adding 2 to 3 nos. depending on your chili spice level. Ingredients
  1. 1. Thinai / Foxtail millet – ½ cup
  2. 2. Toor dal/ Thuvaram paruppu – ½ cup
  3. 3. Dry red chilli – 1 to 2 (depending chilli spice level)
  4. 4. Curry leaves – few
  5. 5. Onion – 4 tbsp (finely chopped)
  6. 6. Ginger – 1 small chunk
  7. 7. Rice flour – 2 to 3 tbsp
  8. 8. Salt – to taste
  9. 9. Oil – for deep frying
Note
  1. * 1 cup = 235 ml
Instructions
  1. Wash and soak thinai/ foxtail millet and toor dal in water for 4 to 5 hours. After 4 to 5 hours of soaking drain water from the millet and dal, keep it aside.
  2. In a blender add dry red chilli, ginger and curry leaves. Blend it once coarsely. Now to the same blender add soaked toor dal, foxtail millet and salt. Grind it corse without adding any water. Transfer it to a bowl.
  3. Now add chopped onion and rice flour to the ground dal mixture. Mix well.
  4. Heat oil in a pan. Now take small portion of the mixture, make it into round shape, then flatten it pressing it slightly with palm.
  5. Now drop it preheated oil one by one and cook in medium flame to get even browning and cooked inside. When done transfer it to a plate with paper towel and serve it hot with chai/ tea and chutney.

  1. Wash and soak thinai/ foxtail millet and toor dal in water for 4 to 5 hours. After 4 to 5 hours of soaking drain water from the millet and dal, keep it aside.

  2. In a blender add dry red chilli, ginger and curry leaves. Blend it once coarsely. Now to the same blender add soaked toor dal, foxtail millet and salt. Grind it coarse without adding any water. Transfer it to a bowl.
