Egg quinoa recipe, Indian quinoa recipes

Egg quinoa/ Quinoa egg rice is a quick and easy to make main dish prepared by adding cooked white quinoa to scrambled eggs which is flavored with cilantro. This egg quinoa is a replica of Indian egg rice which is made with just handful of ingredients, so I thought why not try the recipe with quinoa so I replaced rice with quinoa to make it more healthy. So if you are looking for a quick lunch box recipe here is one. So let’s get to the making!

Ingredients
  1. 1. Quinoa – ½ cup white)
  2. 2. Water – 1 ¼ cup (for cooking quinoa)
  3. 3. Egg -2 nos.
  4. 4. Onion- 1 (finely chopped)
  5. 5. Green chili- 1 (finely chopped, optional)
  6. 6. Ginger garlic paste- ¼ tsp
  7. 7. Crushed pepper – 1/8 to ¼ tsp
  8. 8. Salt - to taste
  9. 9. Cilantro – 1 tbsp (chopped)
  10. 10. Oil – 2 tsp
Note
  1. * 1 cup = 235 ml
Instructions
  1. Wash and soak quinoa in water for 10 minutes. After 10 minutes drain the water and keep the quinoa side. Heat a pan add soaked quinoa along with 1¼ cups of water. We want quinoa to be mushy. Allow it to cook well with lid on in medium flame. This should take about 8 to 10 minutes. When the quinoa looks cooked put off the flame and keep it aside.
  2. Heat oil in a pan/ kadai then add finely chopped onion and green chili. Saute well.
  3. When the onions look sauteed add ginger garlic paste and saute well.
  4. When the raw smell of ginger garlic paste is gone add eggs, salt and pepper. Scramble the eggs well.
  5. Now add cooked quinoa and chopped coriander/ cilantro to the scrambled egg mixture. Mix well. Check for salt. When everything looks combined switch off the flame and serve it hot.
