Mushroom kathi roll recipe, Mushroom frankie roll

Mushroom kathi roll/ Mushroom frankie roll is a delicious, spicy, and tummy filling Indian street food usually prepared by stuffing spiced veggies in a paratha bread. This frankie or wrap can be made with veggies or meat as well and works well as a lunch box recipe, snack, and travel food as well. When I was making this kathi roll for my family I was reminded of my first time experience with this roll during college days and decided to share it in the post as well.

So I was introduced to this kathi roll/ wrap by my friends on a fine evening after college. So we went to a nearby mall to hog on this delicious roll stuffed with chicken and fish I guess and fell in love at my first try. Soon the next week we had some entrepreneurial week in the college and we decided to put up a food stall in college and sell frankie after seeing how busy the food stall in the mall was, so tried to recreate their magic in our own version.

So 3 friends we decided to divide the work among ourselves, like one friend was ready to bring paratha bread for kathi, me chicken stuffing and another friend vegetarian stuffing. That time the paratha bread and veg stuffing was made by my friends mom but trust me the chicken stuffing was prepared by me solely. Don’t ask my how i cooked it as this incident took place 8 years ago and I was definitely an amateur cook at that time. And the food stall was a huge hit as everyone liked our frankie and we earned the same money we put in for purchasing the raw materials. And we were the first one to close the stall as our dishes were sold in 2 hours. I am glad that I took that appreciation and encouragement seriously to write food post and blogs like this. So that’s the end of the story. 

So back to business!!! As mentioned earlier this roll can be made with paratha bread, but for a change I tried making it with tortillas as I had a packet lying at home so put them into good use by making this and it tasted great. For wrap
  1. 1. Tortilla/ Chapati – 4
  2. 2. Butter – 2 tbsp
  3. 3. Green chutney - 4 tbsp
For stuffing
  1. 1. Mushrooms – 10
  2. 2. Onion – ½ cup (thin slices)
  3. 3. Green capsicum – ¼ cup (thin slices)
  4. 4. Carrot – ¼ cup (grated)
  5. 5. Cabbage – 1 cup (shredded)
  6. 6. Ginger garlic paste – ¼ tsp
  7. 7. Red chilli powder – ½ tsp
  8. 8. Turmeric powder – ¼ tsp
  9. 9. Coriander powder – ¼ tsp
  10. 10. Garam masala powder – ½ tsp
  11. 11. Salt – to taste
  12. 12. Curd – 3 tbsp
  13. 13. Oil – 1 tsp
Note
  1. * 1 cup = 235 ml
Instructions
  1. Slice onions, capsicums/ bell pepper thin and chop mushrooms. Keep the veggies aside.
  2. Now in another bowl add the chopped chopped mushroom, curd, red chilli powder, coriander powder, garam masala powder, turmeric powder and salt. Mix well and marinate it for few minutes as the mushrooms will turn black.
  3. After few minutes, heat oil in a pan, add ginger garlic paste. Saute till the raw smell goes. Now add the marinated mixture and saute well in medium flame. Keep sauteeing till the mixture gets dry and a nice aroma is achieved. This should take about 10 minutes. When done put off the flame and keep it aside.
  4. Heat a tava and place tortilla for few seconds and then flip it, after few seconds remove from heat and transfer it to a plate. This step is optional. Now apply some melted butter on to the tortilla then apply a tsp of green chutney over it. Now keep sliced veggies and cooked mushroom mixture. Roll it tight. Secure the lower part of the roll with foil/ butter paper and roll it tight and serve!

  1. Slice onions, capsicums/ bell pepper thin and chop mushrooms. Keep the veggies aside. Now in another bowl add the chopped chopped mushroom, curd, red chilli powder, coriander powder, garam masala powder, turmeric powder and salt. Mix well and marinate it for few minutes as the mushrooms will turn black.
