Curd rice recipe, Thayir sadam

Curd rice/ Daddojanam/ Thayir sadam is a delicious and lip smacking summery dish that is prepared by adding tempering to mashed rice and curd. This tempered curd rice is very flavorful and yummy due to the addition of ginger and cilantro in the tempering. This simple and easy to make dish is well known by everyone but just thought to post it as its going to be really hot in the coming days. I have made this curd rice with basic tempering but you can make it more delicious by adding chopped raw mango, cucumber, onion, grapes or pomegranate pearls as well. Ingredients
  1. 1. Cooked rice – 1 cup
  2. 2. Curd – ¾ cup
  3. 3. Milk – ¼ cup
  4. 4. Salt- to taste
To temper
  1. 1. Mustard seeds – ½ tsp
  2. 2. Urad dal- 1 tsp
  3. 3. Dried red chilli – 1
  4. 4. Oil - 1 ½ tsp
  5. 5. Green chilli- 1
  6. 6. Ginger- ½ tsp (chopped)
  7. 7. Curry leaves – a spring
  8. 8. Chopped cilantro- 1 tbsp
  9. 9. Grated carrot – 1 tbsp
  10. 10. Hing- a pinch
Note
  1. * 1 cup = 235 ml
Instructions
  1. Heat oil in a small pan, add mustard seeds, when it splutters add urad dal when it turns golden brown add dry red chili, chopped green chilli, chopped ginger, hing and curry leaves. Switch off the flame.
  2. Transfer the cooked and mashed rice to a bowl to it add curd. Now add milk also to it. Adding milk adds taste to this dish and also helps maintain the consistency when packed in lunch box.
  3. To this rice mixture add the tempering. Now mix this well. To get nice flowing consistency you can add little more milk/ water. Serve it with chopped cilantro and grated carrot with pickle.
