Quinoa pronounced (kinwa) is a naturally gluten free grain that is rich in protein with all essential amino acids and has very high fiber compared to any other grain, also high in minerals like magnesium and iron. This super healthy grain can be incorporated in our dirt in most simplest and tastiest method and can be relished like any other food prepared in regular cooking.

Methi Quinoa as the name goes is a combination of two healthy and nutritious ingredients to set your meal right. Yes methi quinoa can replace your regular meal a healthy one due to the amount of goodness it holds. Ok,  so much about its goodness we have discussed, and you will be more surprised to know that it involves basic cooking procedure and also ingredients without involving any grinding of special masala to enhance its taste. I made this recipe with methi as I had lot of fenugreek leaves/ methi harvest at home and wished to try something new and interesting and turned out to be great. Methi quinoa is mildly spicy filled with masala with little nuttiness which makes the dish stand out. So if you want try out something new with your stocks of quinoa packet then shall be perfect recipe. So lets get to the making!

Ingredients
  1. 1. Quinoa – ½ cup
  2. 2. Methi/ Fenugreek leaves – ½ cup
  3. 3. Onion – 1 (small)
  4. 4. Green chilli – 1
  5. 5. Red chilli powder – ½ tsp
  6. 6. Garam masala powder – ½tsp
  7. 7. Turmeric powder – ¼ tsp
  8. 8. Salt – to taste
  9. 9. Cumin seeds – ½ tsp
  10. 10. Oil – 1 tbsp
  11. 11. Water - 1¼ cup (to cook quinoa)
Note
  1. * 1 cup = 235 ml
Instructions
  1. Wash and soak quinoa for 15 minutes.
  2. Chop onion, fenugreek leaves and green chili finely. ( Discard the fenugreek stem and use only the leaves for cooking)
  3. Now heat oil in a pan add cumin seeds after it crackles add finely chopped onion and green chilli. Saute well till onions turn lightly golden color.
  4. Now add chopped fenugreek leaves and saute for few seconds. When methi looks sauteed a little add turmeric powder, red chilli powder and salt. Mix well until raw flavors of masala goes.
  5. When the raw smell has gone add soaked quinoa and water. Cover it with a lid and cook in medium flame. This should take about 15 minutes.
  6. After 15 minutes when the quinoa looks cooked (when white tail has appeared) and no sign of water, put off the flame and serve it hot!

How to make methi quinoa with step by step images


wash and soak quinoa

  1. Wash and soak quinoa for 15 minutes.
    Chop veggies and keep it aside. Saute onion
  2. Chop onion, fenugreek leaves and green chili finely. ( Discard the fenugreek stem and use only the leaves for cooking) Now heat oil in a pan add cumin seeds after it crackles add finely chopped onion and green chilli. Saute well till onions turn lightly golden color.

  3. Now add chopped fenugreek leaves and saute for few seconds.

  4. When methi looks sauteed a little add turmeric powder, red chilli powder and salt. Mix well until raw flavors of masala goes.
    Add soaked quinoa and cook
  5. When the raw smell has gone add soaked quinoa and water. (I used around 1¼ cup water to cook quinoa, since it is already soaked, You can add more water if the soaking time is less than 15 minutes) Cover it with a lid when mixture starts to boil.  Cook quinoa in medium flame. This should take about 15 minutes.
    when done fluff it and serve it
  6. After 15 minutes when the quinoa looks cooked (when white tail has appeared) and no sign of water, put off the flame. Fluff it gently and serve it hot!
