Bhindi rice recipe, Okra rice, Vendakkai Sadam

Bhindi rice/ Okra rice/ Vendakkai rice is a quick and easy to make rice that can be prepared either with fresh or left over rice as it involves just tossing of rice in spicy tempered okra mixture. Bhindi rice is yummy tasting masala flavored rice with crunchiness from dal is prepared in a very simple method and also ingredients making it easy even for beginners to cook. This rice can be prepared on any day when you want to try new dish with bhindi/ okra or when you want to cook something really quick as one pot meal. The secret behind this delicious recipe is that okra/ bhindi is cooked in oil without adding any water. For the below recipe I used very less amount of garam masala powder but you can alter the quantity according to your taste. So lets get to the making!

Ingredients

  • Okra/ Bhindi/ Vendakkai – 15
  • Cooked rice – 1 cup
  • Onion – 1
  • Red chilli powder- 1 tsp
  • Coriander powder – ½ tsp
  • Turmeric powder – ¼ tsp
  • Garam masala powder – ¼ tsp
  • Salt – to taste
  • Peanuts – 5
  • Cashews – 3
  • Mustard seeds – ½ tsp
  • Urad dal – 1 tsp
  • Curry leaves – a spring
  • Oil – 2 tbsp

How to make bhindi rice with step by step images

  1. Wash and chop okra/ bhindi as shown in the above picture.

  2. Heat oil in a pan, add mustard seeds after it splutters add urad dal, peanuts and cashews. When aromatic and golden brown add curry leaves and chopped onion. Saute well.

  3. Now add chopped okra, red chilli powder, coriander powder, turmeric powder, garam masala powder and salt. Mix well and cook okra in medium flame without adding any water. (I covered it with lid for sometime) Give it an occasional stir to make sure it does not burn. (If you feel that okra mixture is ticking to the bottom sprinkle little water or cover it with a lid and cook in low to medium flame)

  4. When okra/ bhindi looks cooked add the cooked rice and mix well. When done check for salt and put off the flame. Serve it hot!
