Green chilli chutney is a super spicy chutney prepared in reverse method, yes the green chilli is first ground into paste then tempered and cooked. My mom usually prepares this chutney when we really get bored of regular chutney or if the main dish demands a spicy chutney like this. I usually serve this chutney with instant wheat paniyaram. Make sure to taste very little quantity as it is super spicy. So lets get to the making!

Ingredients

  • Green chilli – 10
  • Sugar – 1 tsp
  • Salt – as per taste
  • Oil – 1 tsp
  • Mustard seeds – ½ tsp
  • Urad dal – 1 tsp
  • Curry leaves a spring
  • Hing – a pinch

  1. In a blender add green chilli and blend it once, then add sugar and salt and grind it to thick paste.

  2. Heat oil in pan add mustard seeds, after it crackles add urad dal, after it turns golden brown add curry leaves and hing then add the ground green chilli mixture and saute well until the raw smell goes.

  3. Now add little water and allow the mixture to boil. When the water has evaporated and when it gets little dry put off the flame and serve it with wheat paniyaram.
