Ghee rice, Nei choru recipe, How to make Ghee rice

Ghee rice/ Nei choru is a flavorful rice prepared by cooking ghee roasted rice in slow flame with fried onion, fried cashew and fried dry grapes as garnish. This is a very easy and simple rice recipe with basic ingredients which can be accompanied with any curry or gravy. This is my all time favorite rice which I learnt from my aunt when I was in Dubai, and I used to love this rice in her preparation with chicken curry. Everyone’s recipe and cooking is different so is mine, this rice is cooked in a style that I like. For the below recipe the amount of ghee and spices can be altered according to your taste and preference. So lets quickly get to the making!

Ingredients

  • Rice – 1 cup
  • Mint leaves – 1/3 cup
  • Ginger garlic paste – ¼ tsp
  • Salt – to taste
  • Fried onion – ¼ cup
  • Cashews – 6 to 8
  • Dry grapes – 6 to 8
  • Ghee – 2 tbsp
  • Oil – 1 tsp

Whole spices

  • Bay leaf – 1
  • Star anise – 1
  • Clove – 2
  • Cinnamon stick – ½
  • Cardamom – 1
  • Cumin seeds – 1/4 tsp

How to make ghee rice with step by step images

  1. Wash and soak rice in water for 20 minutes.

  2. In a pan/ pot add water, bay leaf, clove, cardamom, cumin seeds, cinnamon stick, star anise, ginger garlic paste, mint leaves, few drops of oil and salt. Mix well. When the water starts to boil add soaked rice in and cook till 70% is done. Drain the water and keep the rice aside.

  3. Now heat ghee in a heavy bottom pan fry cashews until golden brown, then add dry grapes, when it puffs add the 70% cooked rice and salt. Mix gently. Now garnish it with fried onions and close it with lid and put the flame to low.

  4. When the rice seems fully cooked put off the flame and serve it hot with spicy gravy or curry of your choice!
