Gutti vankaya kura recipe, Andhra style stuffed brinjal

Gutti vankaya kura is a spicy and little tangy curry prepared with brinjal. Gutti vankaya is prepared by stuffing brinjal with spicy ground masala then cooking the brinjal in low flame. This is a delicious curry and all time favorite one for us. This recipe is simple and easy to prepare and is mouth watering at the same time. This can be accompanied with rice, roti and chapati. So lets get to the making!

Ingredients

  • Brinjal – 6
  • Tamarind extract – ¼ cup
  • Oil – 2 tbsp
  • Mustard seeds – ½ tsp
  • Curry leaves – few

For grinding

  • Chopped Onion – 1
  • Chopped Tomato – 1
  • Grated coconut – ¼ cup
  • Roasted Peanuts – 2 tbsp
  • Sesame seeds – 1 tbsp
  • Red chili powder – 1 tsp
  • Coriander powder – ½ tsp
  • Turmeric powder – 1/3 tsp
  • Salt – as needed
  • Cumin seeds – ¼ tsp

  1. In a blender add all the ingredients listed under grinding and grind it into fine paste.

  2. Wash brinjal and make 2 slit parallel to each other in every brinjal. Now stuff each brinjal with the ground paste gently without breaking them.

  3. Heat oil in a kadai add mustard seeds, after it splutters add curry leaves. Now add the stuffed brinjal and any leftover ground paste in it and stir gently. Cook the brinjal in low flame for 20 minutes. A gentle stir is required occasionally to make sure that brinjal does not get burnt.

  4. When the brinjal is ¾ cooked add tamarind extract in it and give it a gentle stir. Allow it cook in medium flame. When you see the brinjal fully cooked and oil separating from the side of the gravy put off the flame and serve it hot with rice.
