Afghan bolani recipe, How to make bolani

Bolani is a yummy tasting Afghani bread with potato filling. I ate this for the very first time in a friends party and wanted to try making it as it was so delicious. To my shock the very first time I made bolani it turned out perfect and couldn’t wait to add in my blog list. So here goes the recipe.

Ingredients

  • All purpose flour /maida – 1 cup
  • Salt to taste
  • Oil – 1 tsp
  • Water

For filling

  • Boiled potato (big sized) – 1
  • Chopped spring onion / Scallions – 1 tbsp
  • Chopped cilantro – 1 tbsp
  • Red chili powder – 1/4th to 1/2 tsp
  • Salt to taste

How to make bolani with step by step images

  1. In a bowl add all purpose flour/ maida, salt, drops of oil and water. Combine everything and work it into a soft dough. Rest the dough for 30 minutes.

  2. Mash the boiled potatoes and add chopped spring onion, cilantro, red chili powder and salt. Mix everything well.bolani
  3. Now take a ball of dough and flatten it thin. The more thinner the more better.

  4. Now take 2 tbsp potato stuffing and place it in one half of the dough and spread it leaving ¼ th outer.

  5. Now fold it with other half of the dough and seal it with your fingers. Make sure there is no air inside.

  6. Now heat a pan and place the bolani and drizzle some oil around it. When brown spots appear flip it to the other side.
  7. Serve hot with mint sauce or sour cream.
