Chicken chukka recipe, Spicy chukka chicken

Chicken chukka is a very delicious, flavorful and aromatic dish where chicken is cooked in dry form in oil and ghee without adding any water. Chicken chukka is a spicy and yummy tasting recipe that can be prepared quickly without having to grind any special masala makes it easy for beginners also cook. Chukka is usually made with mutton, as I don’t eat nor like it, I prefer doing dishes with chicken better. Though this recipe involves quite a few ingredients than other recipes it is easy and quick to cook as well. Chicken chukka is usually prepared with boneless chicken preferably the breast meat as it is very tender making it easy to consume and also cook fast. For the below recipe I used ghee along with oil to enhance the taste of this which can be cut down as well. So lets get to the making of spicy chukka chicken.

Ingredients

  • Chicken breast – 4
  • Onion – 1
  • Tomato – 1 (small)
  • Ginger garlic paste – 1 tsp
  • Dried red chilli – 2
  • Red chilli powder – 1 tsp
  • Coriander powder – ½ tsp
  • Garam masala powder – ½ tsp
  • Turmeric powder – ¼ tsp
  • Curry leaves – a spring
  • Chopped cilantro – 1 tbsp (for garnish)
  • Cashews – 5
  • Oil – 2 tbsp
  • Ghee – 1 tbsp

Whole spices

  • Clove – 1
  • Cinnamon stick – ½
  • Star anise – ½
  • Cumin seeds – ¼ tsp
  • Fennel seeds – ¼ tsp

How to make chicken chukka with step by step images

  1. Wash, clean and chop chicken breast into small chunks. Keep it aside.

  2. Heat oil and ghee in a heavy bottomed pan/ kadai, add cumin seeds, fennel seeds, dried red chilli, cashews, clove, cinnamon stick and star anise. When aromatic add curry leaves and chopped onion. Saute well and add ginger garlic paste. Saute well until the raw smell goes.

  3. Now add chopped tomato, red chilli powder, coriander powder, turmeric powder, garam masala powder and salt. Mix well and allow the tomatoes to cook. (We don’t want the tomatoes to be mushy)

  4. When tomatoes look cooked add chopped chicken breast and mix well in a way all the pieces get coated well in masala. Cook the chicken in medium flame without adding any water with lid on. Keep an eye on the chicken and give it an occasional stir to avoid burning.
  5. When chicken looks cooked and when the whole mixture looks dry put off the flame and garnish it with chopped cilantro. Serve it hot with rice, roti or chappati!
